Shopping List for the Week: *** Use what you have! Lots of choices for flavours and fun bits

  • proteins: eggs, beans or ground meat

  • Dairy: Milk, parmesan cheese, cheddar or mozzarella

  • Vegetables: choose your 3 favourites: Broccoli, peppers, onions, carrots, mushrooms, tomatoes, corn

  • Eggplant or chicken

  • Aromatics: garlic, onion, ginger (fresh or dried)

  • Pantry: flour, olive oil, sugar, vanilla, breadcrumbs, crushed tomatoes or tomato sauce, rice or noodles, corn starch

  • Seasonings: salt, pepper, basil, oregano, cumin, coriander(dried) or cilantro (fresh) (optional)


Kitchen Tools Needed Everyday:

Apron, Cutting board, paring knife, peeler, grater, Cutlery knife, Fork, Spoons, Measuring cups, Measuring spoons

Food waste bowl, Medium Bowl, small bowl

Clean-up items: Apron, Cleaning cloth, Sink of soapy water, Clean tea towel

Monday: Eggs-tra Ordinary

Ingredients:

Eggs are a teens including scrambled, egg bites and French toast.

6 eggs

Butter

2-3 pieces of bread

1 cup vegetables (Choose from Broccoli, peppers, onions, mushrooms, tomatoes)

¼ cup Cheese – any kind

Fruit – 1 cup (choose from apples, berries, pears, peaches)

Syrup

Cinnamon

Sugar

vanilla

Salt & Pepper

Special TOOLS:

Frying pan or griddle

Egg Bites

Tuesday: Mexican

INGREDIENTS:

Mexican Salsa Bowls:

Rice & beans, roasted veggies with fresh salsa

1 cup rice (white rice uncooked)

2 cups total of hard vegetables (fresh unless indicated):

Choose from: onion, cauliflower, zucchini, squash (cubed-frozen), carrot

1 Onion- medium or large

1 Can black beans

1-2 limes

½ cup fresh Cilantro

1 cup of salsa fruit: Fresh roma tomatoes, mango or peaches

½ cup cojita cheese or feta cheese or parmesan cheese

1 Avocado (optional)

1/2 cup corn (optional)

Seasonings: Cumin, chili powder, cayenne pepper (optional), salt, pepper

Special TOOLS:

Citrus press or fork

Potato masher (optional)

2 pots, 1 lid for rice and beans

1 baking tray

Wednesday: Teriyaki Charm

INGREDIENTS

Teriyaki Salmon and Crispy Tofu with Stir-fried veggies and noodles

soy sauce

brown sugar

honey

water

corn starch

garlic

ginger

mirin (optional)

Sesame oil (optional)

PROTEIN: Salmon, chicken, Tofu – firm, pork, your choice!

Rice vermicelli noodles

2 cups vegetables: Choose 3 bright colours:

GREEN: Broccoli, green beans, boy chok, spinach, peas, celery

ORANGE/YELLOW: Peppers, carrots, zucchini

WHITE/BROWN: Onions, mushrooms, cabbage

1 Small sauce pan

1 pot for noodles

1 skillet or wok

INGREDIENTS:

Eggplant Parmesan with Steamed Veggies

olive oil
1 small yellow onion, finely diced
2 to 3 cloves garlic, minced
1 (28-ounce) can diced tomatoes or pureed tomatoes
1 bay leaf
salt
Fresh thyme, basil, oregano

Parmesan cheese

1 egg

½ cup flour

1 cup bread crumbs

1 eggplant (medium)

Flattened Chicken breast or Pork Cutlet (optional)

Broccoli (1/2 head) or green beans (2 servings)

Lemon

Mozzarella cheese – to grate

Special TOOLS:

3 medium shallow bowls

1 skillet

Oven tray

1 pot with vegetable steamer or shallow pan

Pizza & Cookies

INGREDIENTS:

Pizza Dough: We will make this together

dry yeast

sugar or honey

salt

warm water

flour

olive oil

·      Sauce - Tomato sauce or pesto sauce

·      Cheese - cheddar, mozzarella, feta, goat, your favourite!

TOPPINGS:  

CHOOSE 3 COLOURS!!

Red: peppers, tomatoes, red onion

Yellow: peppers, zucchini, onion, pineapple,

Green: peppers, olives, zucchini, green onions

Brown or black: Olives, mushrooms

Orange: peppers

Protein: Cheese, ham, pepperoni, chicken, bacon or
