AMAZING MUFFINS

- for 6 large muffins

INGREDIENTS:

3/4 cup banana, apple, zucchini or carrot

1 egg

butter

brown sugar

flour - all purpose or whole wheat

baking soda

baking powder

salt        

Vanilla                   

Optional:  cocoa powder, cinnamon, pumpkin spice

 

FUNBITS:

chocolate chips, Oatmeal, Raisins, coconut, hemp hearts, pumpkin seeds, nuts

blueberries, strawberries

Dinner CLUB - Tasty Traybake

INGREDIENTS:

·        At least 1 Aromatic: onions, garlic

·        Olive oil

·        Seasonings:  fresh or dried

o   Parsley, oregano, rosemary, thyme

o   Salt and pepper

o   Garlic powder, chile powder, paprika

o   Mustard or honey

·        4 Cups of Vegetables: Choose 3 Bright Colours

o   Red or Orange:  carrots, peppers, grape tomatoes, squash, red potatoes, sweet potatoes

o   Green: Broccoli, Brussel sprouts, green beans zucchini

o   Purple: Red onion, eggplant, purple potatoes

o   Brown & White: Mushrooms, potatoes, parsnips, cauliflower

·        PROTEIN:  Sausage, chicken or other protein of your choice (optional)

SPECIAL TOOLS:

Baking sheet or tray

Parchment paper (optional)

MACARONS

INGREDIENTS:

·        3 egg whites – room temperature

·        icing sugar

·       almond flour

·       salt

·        white sugar

·        vanilla

·        Optional:

Food colouring (gel-type) or turmeric or matcha powder or coco powder

Standard Buttercream filling – half batch

·        butter – room temperature

·        icing sugar

·        vanilla or other flavour

·        milk

SPECIAL TOOLS:

Electric beater

Toothpick

Parchment paper or silicon mat

Piping bag - sandwich-size ziplock bags work fine

Scissors

Fruity Hedgehogs

INGREDIENTS:

pear - bosc pear with long top is best

Fruit: CHOOSE 3 types

Grapes, blueberries, raspberries, small strawberries, gooseberries

Optional - melon - cantaloupe or honey dew to make small balls with melon baller

Small eyes -CHOOSE From: whole cloves, pointy chocolate chips, pumpkin seeds, sunflower seeds

Lunch - Mac & Cheese

INGREDIENTS:

Uncooked pasta - small pieces like macaroni

Butter

Flour

Milk

Dijon Mustard

Garlic powder

Sharp cheddar cheese or your favourite cheese

Salt

Pepper

VEGGIES: CHOOSE 3

In Mac & Cheese: Cauliflower, broccoli, frozen peas,

On the side: tomatoes, peppers, cucumbers, carrots

SPECIAL TOOLS:

Pot with lid for boiling pasta

Skillet or smaller pot for sauce

Colander

Grater

Wooden spoon

HOT CHOCOLATE BOMBS

Warning: Chocolate work is fun but can be messy!

INGREDIENTS:

Semi-sweet chocolate chips or chocolate buttons or baking chocolate

Cocoa powder

Coconut oil or vegetable oil

white or brown sugar

Milk

OPTIONAL:

mini-marshmallows

sprinkles or small sugar decorations or crushed candy/cookies crumbs

SPECIAL TOOLS:

Tray to define chocolate work area

Silicon or plastic molds or

mini-muffin tin ** easiest or

Limes or eggs with cling wrap

Empty egg carton

Disposable gloves - not essential but recommended

Microwave or Stove * ADULT SUPERVISION REQUIRED
