Mexican
Grain Bowls
INGREDIENTS:
· 1 small red onion
· 3 or 4 Bright colours of veggies:
Choose from:
For roasting: Potato, sweet potato, squash, carrots, parsnips, cauliflower, broccoli, tomatoes, onions
· Corn, cucumber, tomaotoes, peppers, celery, green onions, red cabbage
· Protein: 1 can of Black beans or pinto beans, tofu, eggs or cooked meat
· Cheddar cheese or other cheese
· 1 Avocado (optional)
· 2 cups of Grain (cooked) – rice, bulgar, quinoa, barley, or pasta
· 3 tablespoons olive oil
· Spices: cumin, smoked paprika, chili powder, cayenne (or to taste)
or Oregano, basil, garlic powder or your choice!
· Salt & Pepper
· Lemon or Lime -juice
· Honey or maple syrup
· Cilantro or parsley for garnish (optional)

Vietnamese-style Pho-Noodle Soup
INGREDIENTS:
Veggie noodles - sweet potato, zucchini, carrot
○ 4 oz. thin noodles: wheat or egg noodles, rice glass noodles, vermicelli
CHOOSE 3 Bright colours:
○Oniion, celery, carrot (for soup base flavours)
Edamame
○ Mushrooms
○ Corn,
○ Bean sprouts
○ Bok choy
○ Your choice _________________
Protein: Choose from Tofu, eggs, chicken, pork or beef slices
● SOUP:
○ 4 cups vegetable stock (or any flavour)
● Flavour Toppings:
○ Green onions
○ Mint or basil leaves
○ Lime juice
○ 1 tbsp soy sauce or sriracha sauce
Extra flavour - miso paste

Teriyaki Stir-Fry
INGREDIENTS:
Choose 3 bright colours:
· Green veggies – broccoli, green beans, celery, snow peas, cabbage
· Red veggies – red peppers
Orange veggies - carrots, orange peppers, squash
· Yellow veggies – corn, yellow peppers
· White veggies – onions, garlic, water chestnuts, cauliflower
Olive oil, or broth
Seasoning: salt, pepper
Teriyaki sauce or favourite stir fry sauce or oil-based salad dressing
Protein Power: Add some marinated tofu, chicken, beef or fish to make this a meal.

INGREDIENTS:
PIzza Dough:
·Flour
Yeast
Sugar
Salt
Warm water
Olive oil
· pizza or tomato sauce
· cheese - mozzarella or cheddar or your favourite
· a pinch of red pepper flakes
· a pinch of oregano, or basil
· CHOOSE 3 bright colours:
· E.g. broccoli, tomato, onion, zucchini, olives, pineapple, peppers, mushrooms
Add a protein if desired - eg. pepperoni, ham, bacon, chicken

Indian-style - Channa Masala (Chickpea & Tomato curry)
INGREDIENTS:
2 medium-large onions (about same as amount of tomatoes)
1 can chick peas
1 can tomatoes
Garam masala
salt
Garlic
Ginger
Garam masala or channa masala spice
Serve with:
Rice
Pappadums (optional)
Chutney
Yogurt (if young children find it spicey)
