Nov 3: Pasta Salad
INGREDIENTS:
Pasta - uncooked or cooked
Choose at least one of each colour!
· GREEN: green pepper, pickles, parsley, cucumber, celery, avocado, olives
· RED OR ORANGE: Grape Tomatoes, red and orange peppers, carrots
· YELLOW: chick peas, sweet corn, yellow peppers
* PURPLE - olives, red onion, red cabbbage, red beans or cure meats like ham or salami
· WHITE: Pasta, rice, quinoa, or even potato works
· Cheese – cheddar, parmesan
Dressing: favourite salad dressing like ranch, california or italian
TOOLS:
· Apron
· Cutting board
· Spoon
· Cutlery knife

· Plate

Healthy Muffins or Cornbread Muffins
Ingredients:
*1 1/2 mashed bananas or grated apple or zucchini or carrot
2 eggs
1/2 cup butter or coconut oil – melted (20-30 seconds in microwave)
Dry Ingredients:
1 1/2 cup flour
1 cup brown sugar
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
Optional: 1 tsp cinnamon
·Fun Bits: Use 1/2 cup total: You can mix and match!
Raisins, Choc chips, frozen blueberries or raspberries, hemp hearts, coconut
For Cornbread muffins:
Add:
· 2 TBSP honey
· ¾ cup milk
· ¾ cup yellow cornmeal
Omit: * 1 1/2 cup Fruit or veg
½ cup of choc chips, frozen blueberries, dried cranberries, pumpkin seeds or 1 tsp cinnamon.
Or go savoury with cheese, chives or jalapenos.

Nov 17: Pudding Parfaits
INGREDIENTS:
· 1 large or 2 small avocados - very ripe
· 2 ripe bananas
· 1 Tbsp maple syrup or honey
· 4 Tbsp cocoa powder
· ½ tsp salt
· 1 tsp vanilla
· ½ cup soy milk, coconut milk or almond milk or milk – unsweetened or vanilla
· ½ tsp cinnamon (optional)
Fruits -Choose 2
Apples, berries, pears, melon
Yogurt - greek vanilla or plain, skyr or any yogurt
Toppings - coconut, hemp hearts, chopped nuts, seeds

Brain Bowls
INGREDIENTS:
Try a few variations!
Grains: CHOOSE 1 - cook ahead or we can cook together
pasta, rice, couscous, quinoa, sorghum, millet, barley
Bright Colours: CHOOSE 4 items
· Green: Lettuce, baby spinach, cucumber, celery, edamame, green onions, green beans, broccoli
· Yellow: Corn, yellow peppers, chickpeas, zucchini
· Orange: Carrots, orange pepper, cooked squash
· Red: Tomatoes, red peppers, apple
· Purple: red onion, red cabbage, Kalamata olives
· White: mushrooms, kohlrabi, radish, cauliflower
Protein: CHOOSE 1 or 2
Black beans, leftover cooked chicken or meat, salmon, tuna, hard boiled egg, cheese, tofu, tempeh, haloumi, chick peas, meatballs, ham, feta cheese or your favourite.
Dressing: Pick your favourite dressing or sauce or make one!
1/2 cup mayonnaise / Greek yogurt
Juice of half a lemon
Dijon mustard
Worcester sauce
Fresh pepper
Pinch of garlic powder
Toppings: CHOOSE 1 or 2
Chopped nuts, seeds, hemp hearts, lemon or lime wedges, fresh cilantro or parsley, green onion or chives
