Ginger Pumpkin Soup
Ingredients:
butter
1 onion
1 stalk celery
1 carrot
2 cloves garlic
ginger – grated fresh or from jar
ground coriander (or fresh cilantro for garnish)
ground cardamom (optional)
4 cups vegetable or chicken broth.
3 cups pumpkin or squash chunks (fresh or frozen or canned)
honey
¼ cup cream or sour cream
Salt & pepper to taste

1 cup dried fruits:
Raisins, sultanas, currents, dried cranberries, dried blueberries
