Quesadillas

INGREDIENTS:

·        ·        2 veggies – choice of: 

o   sweet peppers

o   red or green onion

o   tomatoes

·        1 can of red or black beans

·        cumin

·        salt

·        paprika or chile powder

·        whole wheat flour tortillas

·        1 cup cheddar cheese

Oct 12: Pasta with Marinara Sauce

Family Favourite!

INGREDIENTS:

1 onion

garlic - fresh, jar or garlic powder

.Tomatoes - jar or can, any kind

Salt and pepper

Oregano, basil, or italian seasoning

Bay leaf

Pasta - any type

Parmesan cheese

Serve with a green salad.

Oct 19: Minestrone Soup

INGREDIENTS:

1 Onion

1-2 carrots

1-2 stalk celery

Butter or olive oil

1 Can or jar of tomatoes

1 L Water or Soup broth

1 Can of bean - Kidney or chick peas

1 Potato or sweet potato

Other veggies: kale, spinach, zucchini, potato

Salt & pepper

bay lieaf

parmesan cheese - rind and grated

pasta - small such as macaroni

Parsley, oregano or basil (optional)

· Cutting board

Knife for chopping

Peeler

Can opener

· Food waste bowl

Measuring cups and spoons

Oct 27: Mexican Grain Bowls with Roasted Veggies

Ingredients:

Grains:  CHOOSE 1

pasta, rice, couscous, quinoa, sorghum, millet, barley (cooked or uncooked)

Bright Colours: CHOOSE 4 items at least 3 colours

Hard vegetables to Roast·   potatoes, cauliflower, sweet potato, squash, carrots, onions,  

Other Vegetables:

Green:baby spinach, kale, cucumber, celery, edamame, green onions, green beans, broccoli

·       Yellow:  Corn, yellow peppers, chickpeas, zucchini

·       Red: Tomatoes, red peppers, apple

·       Purple: red onion, red cabbage, Kalamata olives

·       White: mushrooms, kohlrabi, radish, garlic

Protein: CHOOSE 1 or 2

Black beans, leftover cooked chicken or meat, salmon, tuna, hard boiled egg, cheese, tofu, tempeh, haloumi, chick peas, meatballs, ham, feta cheese or your favourite.

Dressing: Pick your favourite dressing or sauce or make one!

Suggestions: parsley, rosemary, thyme, garlic powder, oregano, basil, cumin, ground coriander, chili flakes, tumeric

Toppings:  CHOOSE 1 or 2

Chopped nuts, seeds, hemp hearts, lemon or lime wedges, fresh cilantro or parsley, green onion or chives

Nov 3: Fried Rice

INGREDIENTS:

 Butter or oil

3 eggs

1 onion

2 medium carrots

3 cloves garlic

1 cup green peas

Other vegetables - small size like corn, mushrooms, zucchini, broccoli, cauliflower (optional)

Other protein: 1 cup Tofu, chicken, pork or beef already cooked

4 cups cooked rice, cold or 2 cups raw rice

Seasoning:

soy sauce

oyster sauce or teriyaki sauce

sesame oil (optional)

Special TOOLS:

Skillet or wok

Nov 18 @ 5:30pm: Homemade Pizza

INGREDIENTS:

flour

olive oil

salt

warm water

yeast

tomato sauce

Seasonings: oregano, basil, garlic powder

Toppings: CHOOSE at least 3

peppers, mushrooms, pineapple, olives, tomatoes, onions, zucchini, broccoli, spinach,

pepperoni, ham, bacon, chicken

Cheese - mozzarella, feta, cheddar, goat

Special tools:

Measuring cups and measuring spoons

Small bowl and medium bowl

Baking sheet or pizza pan

Nov 23: Asian-style Noodle Soup

INGREDIENTS:

NOODLES:

○    Veggie noodles - sweet potato, zucchini, carrot (optional)

○    4 oz. thin noodles- wheat or egg noodles, rice glass noodles, vermicelli 

  BRIGHT COLOURS: Choose at least 3

                       ○    Edamame , Mushrooms , Corn,  Bean sprouts , carots, celery, Bok choy 

○    Your choice _________________ ●   

SOUP:

○    4 cups vegetable stock or chilcken/beef broth

Flavour Toppings:

                       ○    Green onions

                       ○    Mint or basil leaves

                       ○    Lime juice

                       ○    1 tbsp soy sauce or sriracha sauce .

Special TOOLS:

Peeler or julienne peeler or grater

Nov 30: Coconut Curry with Rice

Make it vegetarian or with your favourite protein! Delicious!

INGREDIENTS:

Aromatics:

1 Onion

4 cloves Garlic

Ginger - fresh, or jarred is best

Coconut oil or olive oil

1 can Coconut milk

1-2 cups Vegetable stock (or water)

1-2 Lemons- juice (1/3-1/2 cup)

½ cup Cilantro (for garnish)

 

Vegetables : Choose at least 3 – about 4-6 cups raw

Sweet potato, Potatoes

Carrots, Sweet peppers, Green beans

Broccoli, Cauliflower, Butternut or acorn squash, zucchini  yellow squash, or pumpkin.

Eggplant, Mushrooms, Peas

Greens like spinach, chard or kale

 Protein: Choose at least one

Chickpeas, Tofu, Tempeh, Meat, chicken or fish

Spices:

·     4 pods Green cardamom (optional)

Turmeric - powdered

Curry powder or garam masala or curry paste

Cayenne or chile powder (optional)

Salt

Scallions or green onions or parsley or cilantro for garnish

Rice - uncooked basmati or long grain rice

Special TOOLS:

Grater - fine for ginger

1 large skillet with lid

1 pot with lid for rice
