Rainbow Salad
Ingredients:
BRIGHT COLOURS of veggies (choose 4-5)
Green:
· Cucumber, Celery, Edamame, Lettuce, cabbage, broccoli
Red:
· Peppers, tomatoes
Yellow:
· Pepper, frozen corn, chickpeas
Orange:
· Baby carrots, peppers
Purple:
· Red cabbage, red onion, red beans
White:
· Fennel, cauliflower, white beans
Salad dressing of your choice OR
DIY Dressing:
Olive oil, lemon or lime or vinegar, fresh or dried herbs, salt & pepper
Tools:
Apron
Cutting board
Knife – cutlery knife or small plastic knife
Small bowl for food waste
Bowl for veggies
Strainer or colander
Salad spinner or clean tea towel
Measuring spoon (½ tsp)
Small jar with lid
Citrus press or fork
Large plate or glass bowl
Cleaning cloth
Soapy water in sink

Fruit Parfait
INGREDIENTS:
Fruits
3 BRIGHT COLOURS – choose 3
· Bananas
· Strawberries
· Blueberries
· Apples
· Oranges
· Melons
· Your choice
Yogurt – plain, vanilla or Greek
Honey (if plain)
Cinnamon (optional)
Cereal or granola
Toppings – hemp hearts, sunflower seeds, choc chips, raisins, pumpkin seeds, chia seeds

Small flour tortillas -whole wheat or plain or 2 slices of bread
Spread – hummus, nut butter, cream cheese, or avocado
