May 7: Power Salads

Ingredients:

BRIGHT COLOURS of veggies (choose 4-5)

Green:

· Celery, Edamame, cabbage, broccoli, green beans

Red:

· Peppers,tomatoes

Yellow:

· Pepper, frozen corn, chickpeas

Orange:

· Baby carrots, peppers

Purple:

· Red cabbage, red onion, red beans

White:

·Onion, garlic, pasta, rice, quinoa

fennel, cauliflower, white beans

Protein (choose 1)

· Beans or chickpeas

Tofu

Eggs

Cheese

Salad Dressing or DIY dressing:

Olive oil

Lemon or lime or vinegar

Salt & pepper (optional)

Herbs: Fresh or dried

- chives, garlic powder, oreganio, basil, dill, cumin, chili powder

Other flavourings: Honey, mustard, soy sauce, ketchup

Tools:

Apron

Cutting board

Knife – cutlery knife or small plastic knife

Small bowl for food waste

Bowl for veggies

Strainer or colander

Cleaning cloth

ABC Pudding

INGREDIENTS:

· Bananas -ripe = yellow with small brown spots

· Avocados – ripe=dark & soft fresh, or frozen

· Cocoa powder

· Honey

· Salt

· Vanilla

· Berries (optional)

Yogurt – plain, vanilla or Greek

Cinnamon (optional)

Cereal or granola

Toppings – hemp hearts, sunflower seeds, choc chips, raisins, pumpkin seeds, chia seeds

2 slices of bread -whole wheat or plain

Cheese – cheddar or other medium firm cheese

Butter (optional)

Veggies for side:

· Peppers- red, green, orange or yellow

· Cucumbers

· Celery

· Carrots

· Grape tomatoes

Your choice

INGREDIENTS:

2 cups flour

baking powder

salt

baking soda

1 cup milk

2/3 cup butter

Savoury choices:

· Dried parsley, garlic powder, italian seasoning, chives, cheese

Sweet choices:

Honey, raisins, cinnamon, choc chips, dried fruit

TOOLS:

· Apron

· Food waste bowl

· Medium Bowl

· Large Spoon

· Measuring cups – 1 cup

· Measuring spoon - TBSP

· Baking tray

· Parchment paper
