July 15: Healthy Cookies

INGREDIENTS:

2 TBSP butter

1 eggs

3/4 cup brown sugar

1/4 cup apple sauce

2 tsp vanilla

1 cup flour

1 ¼ cup quick oats

½ tsp baking soda

1 tsp baking powder

½ tsp salt

1/2 cup of Fun Nutrition bits: Hemp hearts, sunflower seeds, choc chips, raisins, pumpkin seeds, or chia seeds

INGREDIENTS:

· 1 large bell pepper

· 1/4 cup pizza or spaghetti sauce

· 1/4 cup grated cheese

· a pinch of red pepper flakes

- a pinch of oregano, basil or parsley

as many toppings as you can fit!

· E.g. broccoli, tomato, onion, zucchini, olives, mushrooms

August 12: Power Greek Salad

Ingredients:

1 head romaine lettuce

3 large roma tomatoes

1 English cucumber

1 red or green pepper

1 medium red onion

3⁄4 cup kalamata olives - sliced

3⁄4 cup feta cheese

1/3 cup extra virgin olive oil

Juice of 1 lemon

1 tsp oregano flakes

1/2 tsp salt

Ingredients:

· 1 small bunch kale

· 1 TBSP olive oil

· ¼ TSP garlic powder

· ¼ TSP salt

-1/3 cup popcorn kernals

1-2 TBSP coconut oil

Kitchen Tools:

Cutlery knife

Measuring spoon

Salad spinner or clean tea towel

Oven *

Microwave safe bowl - large with lid or Paper bag

Muffins

INGREDIENTS:

Wet ingredients:

3/4 cup banana, grates apple, zucchini or carrot

1 egg

½ cup butter - melted or coconut oil

Dry ingredients:

1 ½ cup flour

1 tsp baking soda

1 tsp baking powder

½ tsp salt

Optional: 2 TBSP cocoa powder or 1 tsp cinnamon

Extras: Up to ¼ cup total

- Chocolate chips, Oatmeal, Raisins, coconut, hemp hearts, pumpkin seeds, nuts
