Lettuce Tacos
Ingredients:
Lettuce – romaine, red or green leaf
3 BRIGHT COLOURS of veggies (choose 3)
• Cucumber
• Peppers- green, red, orange, or yellow
• Carrots
• Zucchini or mushrooms
Cheese (optional)
Beans- 1 can beans (white kidney or cannellini or pinto beans or any type) or 1 cup cooked beans
Lemon or lime
Garlic (1 clove) or garlic powder
Spices – cumin, ground coriander, turmeric, chili or whatever you have
Salt & Pepper

INGREDIENTS:
Tortillas- whole wheat or plain small
Tomato sauce or pureed tomatoes
Oregano, basil, garlic powder,chile

· Protein of your choice
Cheese – mozzarella or cheddar – non-shredded

May 26: Apple Sauce & Power Balls
INGREDIENTS:
3-4 Apples
Cinnamon
½ cup Peanut butter or wowbutter
1 cup Oatmeal – quick oats or large flake
½ cup Honey or maple syrup
1 tsp Vanilla
Pinch of Salt
Fun bits (choose 3: ¼ cup each) raisins, pumpkin seeds, hemp hearts, nuts, dried fruit, seeds, chocolate chips, your choice!
