Small and Large Freezer bags or containers for food storage

Apron

· Cutting board

· Knife for chopping

· Bowls - 1 small, 1 medium

Grater or zester

Spoons

1 skillet with lid

Pot

Stove

Cleaning cloth

Soapy water in sink

Nov 9: Fantastic Fish

We will learn use tins of salmon or tuna to create easy nutritious meals.

Recipes: Salmon (or Tuna) patties, Salmon (or Tuna) Gnocchi.

Please review the recipes and have the ingredients for the Salmon Patties.

All recipes will be explained, but plan on cooking just this one to completion today.

INGREDIENTS:

·        1 sweet potato, peeled, chopped

·        1 can salmon, drained, mashed

·        fresh dill or chives or 1 TBPS dried

·       1 lemon

·       salt

·        pepper

·        1 cup dried breadcrumbs

·        Olive oil  

·        ¼ cup flour *optional

·        1 egg           *optional

Sauce: Mayonnaise, pickle


Special Tools:

Can opener, pot, small plates

Frying pan, spatula or Baking sheet with parchment paper

Nov 16: Egg-traordinairy!

This week we will use a Eggs to become the star in these recipes:

Quiche Muffins, Mini Frittata, Egg Flowers and Breakfast Sandwiches

We will be preparing the Quiche Muffins together this week, preparing the for the others.

INGREDIENTS:

Eggs

Tortillas (optional)

Milk

Baking soda

Flour

3 bright colours : CHOOSE FROM

Broccoli, peppers, onion, mushrooms, tomatoes, spinach, kale, your choice

Optional Protein: Cheese - any kind, ham, bacon, edamame, chick peas

Olive oil or butter

Salt & Pepper

Dried herbs - choose from: oregano, basil, parsley, thyme, dill

Special tools: Muffin tin

Nov 23: Ground Meat

This week we will use beans to create a variety of satisfying meals:
Recipes: Cabbage Roll Casserole, Hamburger Soup, Meatloaf Muffins

We will prepare the Cabbage Roll Casserole or Meatloaf Muffins

Peppers can be substituted for Cabbage

INGREDIENTS:

chopped onion

2 cloves garlic, minced

1 lb minced meat (ground beef, pork or turkey)

1 TBSP Italian seasoning (oregano, basil)

salt, pepper

Worcestershire sauce

Cabbage (2-3 cups) or Peppers

Rice

Soup broth or powder broth

Cheese - cheddar (optional)

Tomato - crushed - 1 can or jar

Tomato paste

Lentils (red or green) -Optional

Meatloaf - no tomatoes, 1 egg, quick oats, but ketchup, mustard

Special tools:

Frying pan

Small containers for freezing individual portions

Muffin tin for meatloaf, small pot for lentils

Nov 30: Lovely Lentils

Lentils are an almost perfect food that is protein packed and plant-based.

Recipes: Superpower soup, Lentil stew, Shepherd’s pie

INGREDIENTS:

·        2 garlic cloves or 1 tsp minced garlic

·        1 cup carrots diced**

·        3/4 cup leeks or yellow onion **

·        2 cups butternut squash, cubed

·        1 cup Kale or Swiss chard

·        1 tablespoons olive oil

·        ½ tsp salt

·        4 cups soup stock or water

·        3/4 cup brown or green lentils

·        1 tsp dried thyme

·        1 tsp dried oregano

·        Fresh ground pepper

·        2 tsp lemon juice (optional)
