April 6: Grain Bowls

INGREDIENTS:

Grains:  CHOOSE 1

pasta, rice, couscous, quinoa, sorghum, millet, barley (cooked or uncooked)

Bright Colours: CHOOSE 4 items at least 3 colours

·       Green: Lettuce, baby spinach, cucumber, celery, edamame, green onions, green beans, broccoli

·       Yellow:  Corn, yellow peppers, chickpeas, zucchini

·       Orange: Carrots, orange pepper, cooked squash

·       Red: Tomatoes, red peppers, apple

·       Purple: red onion, red cabbage, Kalamata olives

·       White: mushrooms, kohlrabi, radish, cauliflower

Protein: CHOOSE 1 or 2

Black beans, leftover cooked chicken or meat, salmon, tuna, hard boiled egg, cheese, tofu, tempeh, haloumi, chick peas, meatballs, ham, feta cheese or your favourite.

Dressing: Pick your favourite dressing or sauce or make one!

Chopped nuts, seeds, hemp hearts, lemon or lime wedges, fresh cilantro or parsley, green onion or chives

April 13: Fried Rice

INGREDIENTS:

2 TBSP Butter or oil

3 eggs, well beaten

1 onion

2 medium carrots

3 cloves garlic

1 cup green peas

4 cups cooked rice, cold

Seasoning:

3 TBSP soy sauce

2 TBSP oyster sauce

1 tsp sesame oil

Optional:  Make your own Teriyaki sauce

Teriyaki sauce

- soy sauce

·       brown sugar, honey, water,

corn starch, garlic, ginger,

(Optional) mirin, sesame oil

·  

PROTEIN: Salmon, Chicken, beef, or tofu

Garnish:  Green onions, chopped finely

Teriyaki Sauce and salmon

April 20: One-pot pasta - Creamy Primavera pasta

INGREDIENTS:

Pasta - uncooked small pieces any shape

Butter or olive oil

Onion

garlic or garlic powder

Soup broth

Milk

Cream cheese or Whipping Cream

Flavours: CHOOSE FROM

- Tomato, mushroom, meat or chicken

- Fresh or dried basil, lemon zest, nutmeg or chile flakes

Parmesan Cheese

2-3 cups veggies – CHOOSE FROM:

broccoli florets, cauliflower florets, peppers, spinach, shredded carrot, or green peas

salt and black pepper

April 27: Pulled Pork Sandwiches - Vegetarian optional

Save time with the vegetarian version or try pork tenderloin for meaty version

INGREDIENTS:

- Pork shoulder or tenderloin (optional)

·       Olive oil

·       medium Onions

Garlic powder or 1 clove garlic

·       water

      smoky paprika (or paprika and liquid smoke)

·       brown sugar

·       Salt and pepper

·       ¾ cup Barbeque sauce**

·       4 Buns - Kaiser buns, whole wheat or ciabatta

Coleslaw: cabbage, carrots, green onions, cider vinegar

**Barbeque sauce: ketchup, mustard, sugar, Worchestershire sauce, chili powder

For vegetarian version:

·       green lentils

·       red lentils

·       shredded carrots

·       mushrooms, finely cut
