May 18: Shepherd’s Pie
Vegetarian option or make with your favourite minced meat
INGREDIENTS:
· olive oil
· 1 yellow onion
· 500g lean ground beef or ground lamb or ½ cup each of red and green lentils
· parsley
· rosemary
· thyme
· Worcestershire sauce
· 2 garlic cloves -minced
· all purpose flour
· tomato paste or ketchup
· 1 cup soup broth or water
· 1 ½ cups frozen or fresh veggies: Choose 3 bright colours from green peas, corn, carrots, celery, zucchini, eggplant or your favourite
· 3 cups potatoes -about 2 large potatoes peeled and cut into cubes
· 1/4 cup butter
· 1/3 cup milk or cream
· salt & pepper
· 1/4 cup parmesan cheese

May 25: Power Salad-Kale & Brussel Sprout
INGREDIENTS:
1 bunch of Tuscan Kale
6 Brussels sprouts
olive oil
almonds or walnuts
1/2 cup finely grated Pecorino cheese or parmesan
-· lemon juice
· Dijon mustard
· 1 shallot or green onion
· garlic
· salt and pepper
PROTEIN: Salmon, Chicken, beef, or hard boiled egg

June 1: Egg Benedict
INGREDIENTS:
● Eggs – one per serve
● English Muffins (1/2 per serve)
● Hollandaise Sauce :
● 4 egg yolks
● lemon juice
● water
● salt
● ½ cup butter
● Paprika (optional)
● Protein options: spinach, avocado or smoked salmon, peameal bacon, ham

Make a few extra servings to freeze!
INGREDIENTS:
- Fresh Lasagna sheets or noodles
Tomato marinara sauce - onion, garlic tomato puree, olive oil, salt, pepper, bay leaf
Freshly Grated cheese (cheddar, parmesan, or mozzarella)
2 cups ricotta cheese or cottage cheese
1 egg
Seaonings: Garlic powder, oregano, Basil flakes
Zucchini, mushrooms, eggplant, spinach, kale
Optional: ground meat for tomato sauce
