Kitchen Tools Needed Every week:

Apron, Cutting board, Cutlery knife, Fork, Spoons, Measuring cups, Measuring spoons

Food waste bowl, Medium Bowl, small bowl

Clean-up items: Apron, Cleaning cloth, Sink of soapy water, Clean tea towel

Oven or Stove - Oven mitts

July 6: Pasta Salad

INGREDIENTS:

pasta - uncooked or cooked

Bright Colours: CHOOSE 4 items at least 3 colours

·       Green: baby spinach, cucumber, celery, edamame, green onions, green beans, broccoli, peas

·       Yellow:  Corn, yellow peppers, chickpeas, zucchini

·       Orange: Carrots, orange pepper

·       Red: Tomatoes, red peppers, apple

·       Purple: red onion, Kalamata olives

·       White: mushrooms, kohlrabi, radish, cauliflower

Protein: CHOOSE 1 or 2

Black beans, leftover cooked chicken, hard boiled egg, cheese- cheddar or feta, haloumi, chick peas, ham, or your favourite.

Dressing: Pick your favourite dressing or sauce or make one!

seasonings- fresh or dried - let’s see what you have!

Extra flavour boosters - honey, mustard, garlic, chives, sun dried tomatoes, fresh herbs, balsamic vinegar

Toppings:  CHOOSE 1 or 2

Chopped nuts, seeds, hemp hearts, lemon or lime wedges, fresh cilantro or parsley, green onion or chives

Special Tools:

Grater, peeler if using carrots

July 13: Stir-Fry with Teriyaki Sauce

INGREDIENTS:

CHOOSE 3 BRIGHT Colours:

·        Green veggies – broccoli, green beans, celery, snow peas

·        Red veggies – red peppers

- Orange veggies - carrots, orange peppers, squash

·        Yellow veggies – corn, yellow peppers, zucchini

·        White veggies – onions, garlic, water chestnuts

PROTEIN: CHOOSE 1:

- Tofu, Chicken, Beef, Pork, Shrimp

Sauce: Your favourite stir fry sauce or

Make your own Teriyaki:

·       soy sauce, brown sugar, honey, water, corn starch,

garlic, ginger

Optional Mirin, sesame oil

Rice - basmati, jasmine, brown rice or long grain white rice

Special TOOLS

Small pot for teriyaki sauce

Pot for rice with lid

Large Frying pan or skillet or wok

July 20: Brain Burgers

Vegetarian or Meat option for Burger

INGREDIENTS:

Bean mixture:

•        1 can of black beans  or 1 lb or ground meat

•        1 egg

•        1 carrot

•        1 medium onion diced finely

•        Garlic  

•        Cumin

•        Chia seeds (optional)

•       salt & pepper

•       chile powder

For Cooking

•        Flour

•        Olive oil  

Buns - Whole wheat or small hamburger buns

Toppings:

Lettuce, Tomato, Cheese, avocado, purple onion, pickles

Mayonnaise, Mustard, relish, ketchup, BBQ sauce

July 27: Zucchini Boats

INGREDIENTS:

·       2 medium zucchinis

¼ purple onion or ¼ cup green onions

·        1 1/2 cup diced VEGETABLES: CHOOSE FROM:

fresh mushrooms, corn, peas

sweet red peppers, tomatoes

·        3/4 cup PROTEIN: CHOOSE FROM

o   black beans (1 can) or ground beef, turkey or sausage meat

shredded cheese – cheddar, mozzarella

olive oil

1 clove garlic (1 tsp minced)

dried herbs (eg. Thyme, rosemary) OR fresh herbs (eg. Parsley, cilantro)

·     salt & pepper
