July 7:
Pasta Salad
INGREDIENTS:
pasta - uncooked or cooked
Bright Colours: CHOOSE 4 items at least 3 colours
· Green: baby spinach, cucumber, celery, edamame, green onions, green beans, broccoli, peas
· Yellow: Corn, yellow peppers, chickpeas, zucchini
· Orange: Carrots, orange pepper
· Red: Tomatoes, red peppers, apple
· Purple: red onion, Kalamata olives
· White: mushrooms, kohlrabi, radish, cauliflower
Protein: CHOOSE 1 or 2
Black beans, leftover cooked chicken, hard boiled egg, cheese- cheddar or feta, haloumi, chick peas, ham, or your favourite.
Dressing: Pick your favourite dressing or sauce or make one!

Extra flavour boosters - honey, mustard, garlic, chives, sun dried tomatoes, fresh herbs, balsamic vinegar

INGREDIENTS:
INGREDIENTS:
For 2-3 servings
● Soft Tortillas – medium or small
● 1 TBSP Vegetable oil
● 1 onion
● 3 cloves garlic or 1 ½ tsp minced garlic
● 1 large bell pepper
● 1-2 portbello mushrooms
or favourite protein (black beans, chicken sliced, or beef slices)
● 1 lime
● Cumin
● chile powder
● smoked paprika
● salt
● black pepper
TOPPINGS:
● 1 cup Cheese – grated
● 1-2 Avocados - ripe
● Tomatoes or Salsa
● fresh cilantro
● Sour cream (optional)

Homemade Flatbread Pizza
INGREDIENTS:
· all-purpose flour
· baking powder
· 1 tsp salt
· baking soda
· 1 c plain Greek yogurt or sour cream or milk
· olive oil·
· Balsamic glaze, for serving (optional)
Vegetables : Choose at least 3:
Mushrooms, Sweet peppers, broccoli, spinach, olives, onions, tomatoes, red onion, zucchini, arugula, your favourite
Cheese: mozzarella, cheddar, feta, goat, your favourite
Extra Protein: chicken, ham, pepperoni, salami, bacon

July 28: Brain Burgers
Vegetarian or Meat option for Burger
INGREDIENTS:
Bean mixture:
• 1 can of black beans or 1 lb or ground meat
• 1 egg
• 1 carrot
• 1 medium onion diced finely
• Garlic
• Cumin
• Chia seeds (optional)
• salt & pepper
• chile powder
For Cooking
• Flour
• Olive oil
Buns - Whole wheat or small hamburger buns
Toppings:
Lettuce, Tomato, Cheese, avocado, purple onion, pickles
Mayonnaise, Mustard, relish, ketchup, BBQ sauce
