TOOLS NEEDED for EVERY Class:

  • Apron

  • Water to clean produce

  • Cutting board

  • Spoons, fork

  • Cutlery knife

  • Medium bowl

  • Food waste bowl

  • Measuring cups and spoons

  • Plate

  • Cleaning cloth

  • Soapy water in sink

October 7: Tacos

INGREDIENTS:

·      Onion, diced

·      Garlic, minced

·      Lettuce

·      Tomatoes

·      Olives

·      Avocado

·      Cheese

·      Beans (red kidney or black)

·      Olive Oil

·      Spices: cumin, group coriander, chili powder, salt, pepper

·      Taco Shells (soft or hard)

·      Optional: Salsa, Sour Cream

SPECIAL TOOLS:

Masher or Immersion Blender

October 21:

Chicken Fried Rice

INGREDIENTS:

•      Aromatic: Onion (sliced), 1-2 tsp Garlic (minced), 1-2 tsp Ginger (grated)

•      Green veggies – broccoli, green beans, celery, snow peas

•      Orange – carrots, orange peppers

•      Red veggies – red peppers

•      Yellow veggies – baby corn, yellow peppers, zucchini

•      White veggies – water chestnuts, mushrooms

•      Chicken Breast

•      Noodles or rice

•      Teriyaki sauce

October 28: Halloween Rice Balls

INGREDIENTS:

●     1 1/2 cups medium or short grain rice

●     2 cups carrot juice or 4 TBSP grated carrot

●   1 cup water

●     1/4 tsp salt

●     Handful of black olives, for garnish

●     A few green bean tips, for garnish

FILLINGS:

●      Pitten olives

●      Piece of tomato

●      Cheese square

●      Green peas

●      1 hard boiled egg

November 4: Chicken Noodle Soup

INGREDIENTS:

·      2 tsp olive oil

·      1 onion

·      2 carrots

·      2 celery stalks

·      500 g raw chicken, breast or thigh – skin & fat removed, bone-in or boneless

·      4 cups or 1 L broth or water

·      1-2 cup optional veggies

·      ¼ cup fresh dill or 1 TBSP dried

·      1 bay leaf

·      ½ tsp pepper

·      1 tsp lemon juice

·      Salt to taste

Fresh dill to garnish

November 11:

Spaghetti Squash & Tempeh Meatballs

INGREDIENTS:

• 1 spaghetti squash

• 1 tsp each salt and pepper

• 4 cups small tomatoes or roma tomatoes

• 3 cloves garlic , minced

• 2 TBSP olive oil

• 1 TBSP apple cidar vinegar or lemon juice

• 1/4 tsp hot pepper flakes (optional)

• 1 can (540 mL) white kidney beans or navy beans

• 3 TBSP chopped fresh parsley or basil or oregano

TEMPEH MEATBALLS:

·    8-ounce package tempeh

·    1 TBSP olive oil

·    1/4 cup grated parmesan cheese (or vegan parmesan cheese for a vegan option)

·    1/3 cup breadcrumbs

·    1 large egg (or 1 flax egg for a vegan option - 1 TBSP ground flaxseed + 2 TBSP water)

·    2-3 TBSP marinara sauce

·    Spices: 1 tsp dried basil, 1 tsp dried oregano, 1/2 tsp garlic powder, 1/2 tsp onion powder, salt and pepper to taste

·    Fresh parsley, chopped (optional, for garnish)

November 18:

Potato Latkes & Homemade Apple Sauce

INGREDIENTS:

·      4 medium potatoes, peeled

·      1 medium onion, peeled

·      2 eggs

·      2 TBSP flour

·      1 tsp salt

·      ¼ tsp black pepper

·      ½ cup vegetable oil (for frying)

APPLE SAUCE:

·      Apples – 1 cup of raw chopped apple makes about ½ cup of sauce

·      Sugar (optional)

·      Maple syrup (optional)

·      Cinnamon

November 25: Greek Lemony Rice & Lemon Chicken

INGREDIENTS:

• 1 TBSP butter or olive oil

• ½ onion or ½ cup mire poix 

• 1-2 cloves garlic minced or 1 tsp garlic powder 

• 1 chicken breast or 2 thighs 

• 1 cup rice 

• 2 cups broth or water with 2 tsp bouillon powder 

• 1 cup veggies : broccoli florets, peppers, spinach, shredded carrot, or green peas 

• ¼ cup parmesan cheese - grated 

• 1 lemon - zest, and juice 

• ½ teaspoon salt or to taste 

• ¼ tsp black pepper 

• Garnish: Parsley – torn fresh leaves, chile flakes, grated parmesan cheese

December 2: Lasagna

INGREDIENTS:

• Lasagna sheets or noodles, cooked

• Marinara sauce 

• Freshly Grated cheese (cheddar, parmesan, or mozzarella) 

• Olive oil

Cheese layers: 

• 2 cups ricotta cheese or cottage cheese 

• 1 egg 

• 1 tsp basil flakes 

Vegetable layers: 

• Zucchini, mushrooms, eggplant – thinly sliced
