April 7:

Sugar Cookies

INGREDIENTS:

·    1 cup butter room temperature

★    1 cup granulated sugar

★    2 tsp vanilla extract

★    1 egg

★    3 cups flour

★    2 tsp baking powder

Decorations - sprinkles, candy, raisins

Icing sugar

milk

Cocoa powder (optional)

Food colouring (optional)

SPECIAL TOOLS:

Baking sheets

Parchment paper

rolling pin (optional)

April 14:

Taco Salad Bowls

INGREDIENTS:

Soft tortillas - large

Olive oil

Lettuce (Romaine or Iceberg)

2 Roma tomato or grape tomatoes

 1/8 red onion 

 2  tbsp fresh cilantro (optional)

 ½ Cucumber

 1 Pepper

 ½ cup corn (optional)

Avocado (optional)

1 can black beans

Cheddar cheese

French or Catalina salad dressing

Cumin

Chile powder

Garlic powder

salt

1 lime 

Corn chips

Special TOOLS:

Ovenproof bowl - glass or metal

Baking sheet

Large bowl

April 28:

Eggplant Parmesan

INGREDIENTS:

1 eggplant or chicken - skinless, boneless pieces

• salt

• flour

• breadcrumbs

• dried oregano

• dried basil

• 2 eggs

• vegetable oil, for lightly pan-frying

• 3 cups marinara sauce, homemade or store-bought

• 1 cup mozzarella shredded

• 1 cup parmesan cheese shredded

• Handful of fresh basil leaves chopped, for garnish (optional)

Serve with your choice of pasta or rice, vegetables

Special TOOLS:

·Colander, paper towel or meat pounder

- 2 plates, 1 shallow bowl

- Frying pan

- Baking dish

May 5: Lumpia - Spring Rolls

Ron’s Request! Can be made with meat or vegetarian.

Ingredients:

·       1 TBSP vegetable oil

·       1 medium onion, 3-4 shallots or 2 green onions

·       3-4 cloves garlic

·       2 tsp ginger

·       4-6 cups shredded vegetables

o   CHOOSE FROM:

Cabbage, Bean sprouts, carrots, mushroom and potatoes

·       1 cup glass noodles or vermicelli (optional)

·       Protein:  500 g minced beef, pork, chicken, turkey, shrimp or tofu or 2 eggs

·       Seasonings:

·       Salty – ½ tsp salt or soup bouillon powder or 2 tsp soy sauce

·       Sweet/Umami – 1 ½ TBSP oyster sauce or hoisin sauce

·       Bitter/Spicy  - 1 TBSP curry powder or 1 tsp chili powder or 1 tsp sesame oil or ½ tsp black pepper

·       1 TBSP corn starch if needed

·       Spring roll wrappers – 1 package, thawed

·       Vegetable oil – for brushing on or deep frying

Pastry brush

Baking sheet & Parchment paper

Optional: Frying pan or air fryer

May 12:

Quinoa Pilaf

INGREDIENTS:

 Quinoa or other grain (rice, barley, millet, couscous, sorghum)

Aromatics: Choose from onion, garlic, ginger

3 Bright colours: choose from peppers, mushrooms, carrots, peas, edamame, broccoli, cauliflower, sweet potato, cranberries or your favourites

soup broth or bouillon powder

Protein: chicken, pork, beef, egg, tofu, chick peas, black beans

Seasoings: Salt, pepper,

cumin, coriander, chili powder or rosemary, thyme

Garnish: Fresh herbs, green onions, chopped nuts, hemp hearts, pomegranate seeds

Special TOOLS:

Pot or skillet with lid

May 19:

Ukrainian Halushki

- vegetarian or meat option Traditionally done with bacon and a cream sauce

INGREDIENTS:

·    Flour  - all-purpose or European flour

2-4 eggs

Butter

Salt & Pepper

Toppings:

·        1-2 cups fresh or frozen vegetables: traditionally mushrooms or cabbage, Also try broccoli, peppers, green beans, peas or your favourite

·       1 onion

Garlic (optional)

·        Protein or Flavour food:   3 slices of bacon or ham or salami,

Alternative flavours - try roasted red peppers, sundried tomatoes, cooked chicken, tuna or salmon

Traditionally served with Sour cream

·        Green onions and fresh herbs (e.g. dill, parsley, cilantro) to garnish

June 2:

Spaghetti Squash and Homemade Meatballs

INGREDIENTS:

1 spaghetti squash (or spaghetti pasta)

Olive oil

1-2 onions - to get 1 cup chopped

2-3 cloves garlic

1 lb minced meat (ground beef, pork or turkey) or 1 can of beans

1 TBSP Italian seasoning (oregano, basil)

salt, pepper

1 egg

Bread crumbs or oatmeal

1 can diced tomatoes

basil, oregano

Parmesan cheese

Special tools:

Baking sheet, Baking dish

Bowl

Parchment paper

Option - to fry meatballs in skillet

RECIPE: Italian Meatballs

June 9: Cauliflower Crust Pizza

INGREDIENTS:

Cauliflower

cheese - cheddar or mozzarella, parmesan

2 eggs

salt & pepper,

Italian seasonings: garlic powder, basil, oregano

Toppings:

Tomato sauce or pesto sauce

Protein - salami, ham, chicken, cheese

Veggies - Peppers, mushrooms, olive, tomatoes, zucchini, olives, pineapples

Special TOOLS:

Baking sheet or pizza pan

Grater

Paper towel or clean tea towel

Parchment paper
