TOOLS NEEDED for EVERY Class:

  • Apron

  • Water to clean produce

  • Cutting board

  • Spoons, fork

  • Cutlery knife

  • Medium bowl

  • Food waste bowl

  • Measuring cups and spoons

  • Plate

  • Cleaning cloth

  • Soapy water in sink

January 23:Fried Rice

INGREDIENTS:

Butter or vegetable oil or olive oil

Protein: eggs, beans or chick peas, ham, chicken or cooked meat

1 onion

Bright colours: Choose 3: carrots, peas, peppers, broccoli, cauliflower, green beans, your choice

garlic

4 cups cooked rice, cold or 1 and 1/2 cup uncooked rice

Seasoning: Use what you have

Soy sauce or Worchestershire sauce

Oyster sauce or hoisin sauce or teriyaki sauce

Sesame oil (optional)

SPECIAL TOOLS

Grater

Frying pan

Wooden spoon or flipper

January 30:

Hearty Vegetable & Lentil Soup

INGREDIENTS:

·butter or olive oil

1 onion

1 stalk celery

1 medium carrot

garlic

1 cup of dry lentils – red or green or mixed

cabbage or kale or spinach

1 can stewed tomatoes, diced or crushed or whole tomatoes

vegetable broth

thyme, marjoram

Bay leaf

salt & Pepper

uncooked pasta and/or Barley

Parmesan cheese, parsley for garnish

SPECIAL TOOLS:

Grater

Colander

Baking dish or BBQ basket (optional)

Oven or BBQ* ADULT SUPERVISION

Feb 6: Fajitas

INGREDIENTS:

For 2-3 servings

●       Soft Tortillas – medium or small

●       1 TBSP Vegetable oil

●       1 onion

●       3 cloves garlic or 1 ½ tsp minced garlic

●       1 large bell pepper

●       1-2 portbello mushrooms

 or favourite protein (black beans, chicken sliced, or beef slices)

●       1 lime

●       Cumin

●       chile powder

●       smoked paprika

●       salt

●      black pepper

TOPPINGS:

●       1 cup Cheese – grated

●       1-2 Avocados - ripe

●       Tomatoes or Salsa

●       fresh cilantro (optional)

●       Sour cream (optional)

TOOLS:

Grater

Frying pan - heavy bottom

Wooden spoon

Bowls

Stove * ADULT SUPERVISION

February 13: Brain Burgers

Vegetarian or Meat option for Burger

INGREDIENTS:

Bean mixture:

•        1 can of black beans  or 1 lb or ground meat

•        1 egg

•        1 carrot

•        1 medium onion diced finely

•        Garlic  

•        Cumin

•        Chia seeds (optional)

•       salt & pepper

•       chile powder

For Cooking

•        Flour

•        Olive oil  

Buns - Whole wheat or small hamburger buns

Toppings:

Lettuce, Tomato, Cheese, avocado, purple onion, pickles

Mayonnaise, Mustard, relish, ketchup, BBQ sauce

February 27:

Eggs Benedict with Hollandaise Sauce

INGREDIENTS:

●      Eggs – one per serve

●      English Muffins (1/2 per serve)

●      Hollandaise Sauce :

●      4 egg yolks

●      lemon juice

●      water

●      salt

●      ½ cup butter

●      Paprika (optional)

●      Protein options:  spinach, avocado or smoked salmon, peameal bacon, ham

TOOLS:

1 small pot

1 large skillet

Slotted spoon

Blender

Stove * ADULT SUPERVISION

Toaster or oven *

March 6:

Channa Masala with Rice

INGREDIENTS:

2 medium-large onions (about same as amount of tomatoes)

1 can chick peas

1 can tomatoes

Garam masala or Channa Masala spice mix

salt

Garlic

Ginger

Garam masala or channa masala spice

Cilantro (fresh - optional)

Serve with:

Rice

Pappadums (optional)

Chutney

Lemon or lime wedges

Yogurt (for those who find it spicy)

Medium pot or skillet

Pot with lid for rice or rice cooker

March 20: Eggplant Parmesan

Perfect to substitute Chicken or Veal if desired.

INGREDIENTS:

Eggplant (Substitute: Chicken breasts or veal cutlets)

salt & pepper

flour

breadcrumbs

dried oregano

dried basil

2 eggs

vegetable oil, for lightly pan-frying

3 cups marinara sauce, homemade * RECIPE BELOW or store-bought

mozzarella cheese, shredded

parmesan cheese

Handful of fresh basil leaves chopped, for garnish (optional)

Tools:

1 Knife – sharp chef and paring knife

Grater for cheese

2 plates, 1 shallow bowl

Heavy bottomed frying pan

Baking dish

Oven mitts

March 27: Pesto with Pasta

INGREDIENTS:

·      Green leaves - basil, kale, arugula or spinach

Olive oil

garlic

Parmesan cheese

pine nuts or almonds or cashews or walnuts

Salt & pepper

Pasta - penne or ziti work best, spaghetti, linguini or fettucine are good options

Vegetables : Choose at least 3

Sweet peppers, broccoli, carrots, peas, zucchini, cauliflower, mushroom, your favourite

Cheese: parmesan, pecorino or asiago (hard flavourful cheese)

Extra Protein: chicken, tofu, hard-boiled egg, sausage

SPECIAL TOOLS:

Food processor or blender
