  • Apron

  • Water to clean produce

  • Cutting board

  • Spoons, fork

  • Cutlery knife

  • Medium bowl

  • Food waste bowl

  • Measuring cups and spoons

  • Plate

  • Cleaning cloth

  • Soapy water in sink

Oct 6: Apple Pie with Homemade Pastry

INGREDIENTS:

Cold Butter

Flour

Sugar

Salt

Cold Water

Apples

Lemon Juice

Cinnamon

Oct 13: Chicken Noodle Soup

INGREDIENTS:

·        olive oil

·        1 onion

·        2 carrots

·        2 celery stalks

·        500 g raw chicken, breast or thigh – skin & fat removed, bone-in or boneless

·        4 cups or 1 L broth or water

·        Noodles –angel hair pasta vermicelli or egg noodles

·        1-2 cup optional veggies

VEGETABLE CHOICES: leeks, fennel, tomatoes, potatoes, squash, mushrooms, parsnips- add earlier or green beans, zucchini, broccoli

·        fresh thyme or oregano or dill or 1 TBSP dried

·        1 bay leaf

·        Salt and pepper

·        lemon juice

·        Parsley to garnish

October 20:

Baked Mac & Cheese

INGREDIENTS:

·   butter

• flour

• milk

• cheddar cheese

• garlic powder

• Dijon mustard

• 1 egg

• salt

• freshly ground black pepper

• macaroni (about 225g uncooked pasta)

• frozen green peas, thawed or Broccoli florets

• bread crumbs

SPECIAL TOOLS:

Food processor or blender

Pot for pasta

Colander

Large bowl

Tongs

Grater

Oct 27:

Shepherd’s Pie

INGREDIENTS:

·     - vegetarian or meat option

INGREDIENTS:

·        olive oil

·        1 yellow onion

·        500g lean ground beef or ground lamb or ½ cup each of red and green lentils

·        parsley

·       rosemary

·       thyme    

·        Worcestershire sauce

·        2 garlic cloves -minced

·       all purpose flour

·       tomato paste or ketchup

·        1 cup soup broth or water

·        1 ½ cups frozen or fresh veggies: Choose 3 bright colours from green peas, corn, carrots, celery, zucchini, eggplant or your favourite

·        3 cups potatoes -about 2 large potatoes peeled and cut into cubes

·        1/4 cup butter 

·        1/3 cup milk or cream

·        salt & pepper

·        1/4 cup parmesan cheese

1 medium-large frying pan

Nov 3: Pasta Bake

INGREDIENTS:

·        extra-virgin olive oil

·        ¾ pound bulk hot or mild Italian sausage (pork, chicken or turkey or can of white beans)

·        4 garlic cloves, thinly sliced

·        dried oregano

·        fennel seeds

·        Pinch of red-pepper flakes, plus more for serving (optional)

·        1(28-ounce) can whole peeled tomatoes with their juices

·        1(14-ounce) can crushed or strained tomatoes

·        bay leaves

·        salt & pepper

·        dried pasta, such as small shells, farfalle or other shaped pasta

·        fresh mozzarella, torn into bite-size pieces

·       whole-milk ricotta

·       grated Parmesan

·       basil leaves

Nov 10: Homemade Gnocchi

INGREDIENTS:

Potatoes

·       salt & pepper

·       Olive oil

·       butter

Flour

Egg

Cheese - cheddar, parmesan

Serve with Pasta sauce or butter

Nov 17:Baked Apple Fritters

INGREDIENTS:

●      flour - whole wheat and/or all purpose

Butter - cold

1 egg

Apples

Brown sugar

Baking powder

Cinnamon, Nutmeg, allspice or pumpkin spice

Salt

Milk

Vanilla

icing sugar

TOOLS:

Baking sheet

Nov 24: Homemade

Pierogis

INGREDIENTS:

·     Flour

Cold water

Eggs

Vegetable oil

 Potato

Onions

Butter

Salt & Pepper

Cheese

Sour cream

TOOLS

Medium pot, slotted spoon

Heavy skillet

Baking sheet or plate

Parchment paper

Stove * ADULT SUPERVISION

June 10: Eggplant Parmesan

Perfect to substitute Chicken or Veal if desired.

INGREDIENTS:

Eggplant (Substitute: Chicken breasts or veal cutlets)

salt & pepper

flour

breadcrumbs

dried oregano

dried basil

2 eggs

vegetable oil, for lightly pan-frying

3 cups marinara sauce, homemade * RECIPE BELOW or store-bought

mozzarella cheese, shredded

parmesan cheese

Handful of fresh basil leaves chopped, for garnish (optional)

Tools:

1 Knife – sharp chef and paring knife

Grater for cheese

2 plates, 1 shallow bowl

Heavy bottomed frying pan

Baking dish

Oven mitts
