TOOLS NEEDED for EVERY Class:

  • Apron

  • Water to clean produce

  • Cutting board

  • Spoons, fork

  • Cutlery knife

  • Medium bowl

  • Food waste bowl

  • Measuring cups and spoons

  • Plate

  • Cleaning cloth

  • Soapy water in sink

July 11: Strawberry Shortcake

INGREDIENTS:

Whole wheat or All-purpose flour

honey

cinnamon

baking powder

coconut cream

salt
vanilla
sugar
strawberries
whipping cream or greek yogurt

SPECIAL TOOLS

·baking sheet

Beater for whipping cream

July 21: Brain Burgers

Vegetarian or Meat option for Burger

INGREDIENTS:

Bean mixture:

•        1 can of black beans  or 1 lb or ground meat

•        1 egg

•        1 carrot

•        1 medium onion diced finely

•        Garlic  

•        Cumin

•        Chia seeds (optional)

•       salt & pepper

•       chile powder

For Cooking

•        Flour

•        Olive oil  

Buns - Whole wheat or small hamburger buns

Toppings:

Lettuce, Tomato, Cheese, avocado, purple onion, pickles

Mayonnaise, Mustard, relish, ketchup, BBQ sauce

Your favourites!

Baking tray

July 28: Super Grain Bowls

INGREDIENTS:

·      Green leaves - basil, kale, arugula or spinach

Olive oil

garlic

Parmesan cheese

pine nuts or almonds or cashews or walnuts

Salt & pepper

Pasta - penne or ziti work best, spaghetti, linguini or fettucine are good options

Vegetables : Choose at least 3

Sweet peppers, broccoli, carrots, cucumber, purple cabbage, zucchini, cauliflower, mushroom, your favourite

Cheese: parmesan, pecorino or asiago (hard flavourful cheese)

Extra Protein: chicken, tofu, hard-boiled eggs, beans, chickpeas

SPECIAL TOOLS:

Food processor or blender

Pot for pasta

Colander

Large bowl

Tongs

Grater

Aug 11:

Poutine

INGREDIENTS:

·       Potatoes

Olive oil

Salt & Pepper

Cheese curds

Gravy: ·       Onion

·       Mushrooms  

·       Butter 

·       Flour

·       Vegetable broth

SPECIAL TOOLS:

Small pot or skillet

Baking tray

Aug 18: BBQ Kebabs/Kofta and Tzatziki

INGREDIENTS:

black beans or ground meat - pork or beef or solid protein like chicken

●       1 lime

●       Cumin

●       chile powder

●       smoked paprika

●       salt

●      black pepper

TOPPINGS:

●     Tzatziki - cucumber, greek yogurt, garlic, lemon juice, salt

TOOLS:

Skewers

Aug 25: Fish Tacos with Fruit Salsa

INGREDIENTS:

Fruit - 1 1/2 cup Choose from: tomatoes, mango, peaches, nectarines or watermelon or your favourite juicy fruit

·       Tortillas – small corn or flour

·       1 lb tilapia or white fish (more if necessary)

·       ground cumin

·       cayenne pepper or paprika

·       salt & pepper

·       Olive oil

·       butter (optional)

purple cabbage

·       avocado

·       tomatoes

·       red onion or green onion or sweet white onion

·       Cilantro - leaves

·       1 cup Cotija or Feta cheese (or cheddar)

·       2 limes or lemons

·       1/2 cup sour cream or Greek yogurt

·       1/3 cup mayonnaise

·       1 tsp garlic powder or 2 cloves of garlic

·       Siracha sauce (optional)

SPECIAL TOOLS:

2 bowls for salsa and creamy sauce

Baking sheet with parchment paper

Dry frying pan to heat corn tortillas or plate and paper towel to microwave flour tortillas

Sept 15:Foccacia Bread

INGREDIENTS:

●      flour

Warm water

yeast

salt - fine, coarse salt for garnish (optional)

Olive oil

Toppings: cheese, olive, tomatoes, red onions - your choice!

TOOLS:

Heavy baking dish or cast iron fry pan

Sept 22:

Samosas

INGREDIENTS:

·       pastry – frozen 1 package - Filo or spring roll wrappers

OR Make your own Samosa Dough (see recipe and have ready to roll out)

·       4 Potatoes

·       1 cup Green peas

·       4 Green Onions

·       ¼ cup cilantro

·       4 cloves garlic

·       ½ tsp chili powder

·       1 tsp cumin

·       1 tsp garam masala

·       ¾ tsp salt or to taste

Medium pot or skillet

Baking sheet

Parchment paper

Stove & Oven * ADULT SUPERVISION

June 10: Eggplant Parmesan

Perfect to substitute Chicken or Veal if desired.

INGREDIENTS:

Eggplant (Substitute: Chicken breasts or veal cutlets)

salt & pepper

flour

breadcrumbs

dried oregano

dried basil

2 eggs

vegetable oil, for lightly pan-frying

3 cups marinara sauce, homemade * RECIPE BELOW or store-bought

mozzarella cheese, shredded

parmesan cheese

Handful of fresh basil leaves chopped, for garnish (optional)

Tools:

1 Knife – sharp chef and paring knife

Grater for cheese

2 plates, 1 shallow bowl

Heavy bottomed frying pan

Baking dish

Oven mitts
