Pasta with Marinara Sauce

INGREDIENTS:

olive oil
1 small yellow onion, finely diced
2 to 3 cloves garlic, minced
1 (28-ounce) can diced tomatoes or pureed tomatoes
bay leaf
salt
Fresh thyme, basil, oregano, or other herbs
Parmesan cheese, to garnish, optional
Uncooked pasta

Cauliflower - 1 small head

February 4: Minestrone Soup

INGREDIENTS:

4 TBSP butter

1 medium onion

1 stalk celery

1 carrot

2 cloves garlic

1 (19 ounce) can beans - white beans, kidney beans, or chick peas

cabbage or kale

1 can tomatoes

1 tablespoon tomato paste (optional_

2 medium potatoes

1 liter of vegetable broth

dried parsley and oregano, basil, marjoram

salt or more to taste

1 cup elbow macaroni (uncooked)

Parmesan cheese - rind and cheese

Jacket Potatoes

INGREDIENTS:

Medium potato (1 per person)

½ tsp butter

1 TBSP of each:

·        Green:  chopped green onion, or kale or parsley

·        Red:  Chopped red pepper, grape tomatoes, red kidney beans

·        Yellow:  Frozen corn niblets, chopped yellow pepper, refried beans

1 TBSP Grated cheddar cheese

February 25:

Homemade pizza

INGREDIENTS:

Flour

Yeast

Sugar

Salt

Olive Oil

Warm water

Tomato Sauce or Pesto sauce

Seasonings: Garlic powder, oregano, basil, chile flakes

Toppings:

Protein: Cheese - mozzarella, cheddar, feta, goat

Other protein of your choice - pepperoni, salami, chicken, cooked bacon

Colourful toppings: CHOOSE 3 colours

Green: peppers, spinach, kale, olives, zucchini

Red: tomatoes, peppers, roasted peppers, sundried tomatoes

Yellow: peppers, pineapple, zucchini

Black or purple: Olives

Brown or white: Mushrooms

Pad Thai

INGREDIENTS:

·       1 package of Dried Vermicelli (2-3 mm thick)

·       Tamarind Puree (or Ketchup)

·       Brown Sugar 

·       Fish Sauce (or Soy Sauce)

·       Oyster Sauce 

·       Canola Oil (or vegetable)

·       ½ Onion 

·       2 Garlic Cloves (finely chopped)

·       2 Eggs 

·       1 ½ cups Beansprouts

·       Firm Tofu 

·       Garlic Chives or green onions

·      Peanuts 

·       Lime

·       Cilantro leaves (optional)

·       Ground Chile powder, flakes or sauce (optional)

 

ADDITIONAL COLOUR OPTIONS: ½-1 cup per person

Orange veggies - carrots

o   Green veggies – broccoli, green beans, celery, snow peas, spinach, zucchini

o   Red veggies – red peppers, chiles

o   Yellow veggies – corn, yellow peppers

March 25: Veggie Pot Pie

Can add Chicken to this for Chicken Pot Pie if desired

INGREDIENTS:

Vegetables : Choose at least 3:  2-3 cups

Mushrooms, Sweet peppers, Celery

Green peas, onions

Broccoli, Carrots, Squash

2 cups cooked turkey or chicken (Vegetarian version – use Mushrooms and extra veggies

1 cup Vegetable stock

1 ½ cup Milk or Cream

cayenne pepper or chile powder

Black pepper (to taste)

1 package of frozen puff pastry (pre-rolled) or 2 pie crusts, thawed
