May 19:

Quesadillas

INGREDIENTS:

·        olive oil

·        1 brown onion

·        2 garlic cloves, crushed

·        ground cumin

·        ground coriander

·        chili powder

·        can beans - kidney beans or black beans

Cheese

Veggies: Onion, peppers, tomatoes (your choice)

Tortillas

Jalapenos (optional)

2 Avocados (optional)

Lime

Salsa or tomatoes

Sour cream (optional)

Special TOOLS:

·Medium fry pan or griddle

April 22:

Mac and Cheese

INGREDIENTS:

butter

Flour

powdered garlic

Dijon mustard

Salt and pepper

Macaroni pasta or short pasta

milk

2-3 cups veggies – CHOOSE FROM:

broccoli florets, cauliflower florets, peppers, spinach, shredded carrot, or green peas

Cheddar cheese and parmesan cheese

Special Tools:

Large skillet with lid

April 29: Crepes or pancakes

INGREDIENTS:

CREPES

flour

eggs

milk

water

salt

Butter

OR Savory CHICKPEA Pancakes

besam (chick pea) flour

baking powder

Seasonings: garlic powder, cumin, ground coriander, (pepper flakes-optional), tumeric

warm water

Olive oil

Savoury fillings: CHOOSE at least 3   Scrambled egg, cheese, salsa  or asparagus and cheese sauce, or roasted peppers with goat cheese, green onions, spinach, peppers, grated carrot, mushrooms, or your favourite filling.

Sweet fillings:   vanilla, sugar, fruit - 2 or 3 types - berries, bananas, kiwi, apple, pear, strawberries, blueberries

Top with lemon juice, icing sugar, fruit, cinnamon, whipped cream

Special TOOLS:

1 small-medium frying pan

May 6: Nachos and Guacamole

Ingredients:

Corn chips

Cheese

Salsa

Lime

Avocado

Cilantro (optional)

Salt

Veggies: Peppers, green onions, olives, corn, Protein: beans or chick peas, cooked ground beef or chicken

Sour cream (optional)

Special Tools:

Baking sheet

May 13: Coconut Curry and Rice

INGREDIENTS:

Seasoning:

Garlic, Ginger

Thai Chile paste (red or green)

Cilantro

Coconut milk

Olive oil or coconut oil

Salt and pepper

CHOOSE 3 BRIGHT Colours:

·        Green veggies – broccoli, green beans, celery, snow peas

·        Red veggies – red peppers

- Orange veggies - carrots, orange peppers, squash

·        Yellow veggies – corn, yellow peppers, zucchini

·        White veggies – onions, garlic, water chestnuts

PROTEIN: CHOOSE 1:

- Tofu, Chicken, Beef, Pork, Shrimp

Rice - basmati, jasmine, brown rice or long grain white rice

May 27: Pasta Bake

Ingredients:

·        olive oil

·       optional- ground meat or sausage, tempeh or lentils

·       aromatics: onion, garlic

·       1 can tomatoes - passata crushed or strained tomatoes, or dices tomotoes, whole tomatoes

·        Seasonings:

bay leaves, salt, pepper, basil, oregano, pepper flakes, fennel

·        2 cups dried pasta, such as small shells, farfalle or other shaped pasta

·      medium cheese - mozarella, cheddar

Soft cheese - ricotta, cottage cheese, goat cheese or cream cheese

·        hard cheese-Parmesan, romano or asiago

June 3: Teriyaki Stir Fry

Teriyaki Stir-Fry

INGREDIENTS:

Choose 3 bright colours:

· Green veggies – broccoli, green beans, celery, snow peas, cabbage

· Red veggies – red peppers

Orange veggies - carrots, orange peppers, squash

· Yellow veggies – corn, yellow peppers

· White veggies – onions, garlic, water chestnuts, cauliflower

Olive oil, or broth

Seasoning: salt, pepper

Teriyaki sauce or favourite stir fry sauce or oil-based salad dressing

Protein Power: Add some marinated tofu, chicken, beef or fish to make this a meal.

Noodles - vermicelli -rice noodles or glass noodles

Teriyaki Sauce: To make our own: Soy sauce, ginger, garlic, honey or brown sugar, rice vinegar
