January 10:

Cornbread Muffins

INGREDIENTS:

·       frozen banana

·       water, milk or almond milk

·       honey or maple syrup

·       vanilla

·       ice cubes or crushed ice

cinnamon or pumpkin spice

Oatmeal - quick oats

Peanut butter or wowbutter or apple sauce

Salt

Fun bits: raisins, nuts, seeds, hemp hearts, pumpkin seeds, sunflower seeds, dried cranberries, chocolate chips

Dried coconut flakes

Optional: cocoa powder, nutella, greek yogurt, avocado, frozen fruits, flaxseed oil

SPECIAL TOOLS:

Container with lid

Medium bowl

2 spoons

Traybake with Cauliflower bites and Roasted potato wedges

INGREDIENTS:

Protein: Chicken, sausage, pork loin, tofu or your choice

Veggies: Choose at least 3

Cauliflower

Onion - yellow or red

Peppers

Carrots

Parsnips

Sweet potato

Potato

Grape Tomatoes

Zucchini

Broccoli

Seasonings:

Garlic - fresh or powder

Olive Oil

Salt & Pepper

Herbs: thyme, rosemary, oregano or poultry spice, paprika - choose your favourties

Homemade Pizza

INGREDIENTS:

Yeast - instant yeast or pizza yeast

Sugar

Salt

Warm water

Flour

Olive oil

Sauce - tomato sauce - crushed tomatoes or pizza sauce

Seasonings: dried oregano, basil, garlic powder or Italian seasonings

Toppings: Choose at least 3

Veggies: peppers, onions, mushrooms, zucchini, broccoli, spinach

Fruits: tomatoes, pineapple, olives

Protein (optional): pepperoni, ham, bacon, chicken

CHEESE - mozzarella, cheddar, feta, goat or parmesan

TOOLS:

· Bowls - small and large, plate for lid

Baking sheet or pizza pan, parchment paper (optional)

Nov 1:

Pumpkin cupcakes with Cream cheese icing

Ingredients:

  ·        2 eggs

·        1/4 cup apple sauce

·        melted butter or vegetable oil

·        brown sugar

·        vanilla extract

·        1 ½ cups grated pumpkin or 1 cup pumpkin puree

·        flour

·        baking powder

·        baking soda

·        ground cinnamon

·        pumpkin spice

·        all spice (optional)

·        ginger (optional)

·        1/2 cup regular cream cheese – at room temperature

·        2 TBSP butter at room temperature

·        icing sugar

·        vanilla

·      salt

·       Decorations: nuts, seeds, choc chips, candy, food colouring

INGREDIENTS:

Butter or canola or sunflower oil

1 can Baked beans

Protein: ham, bacon, sausage, or halloumi cheese

Bread

Tomato - 1 large

Mushrooms

Onion

Potatoes - cooked (previously boiled)

Ingredients:

macaroni or other small pasta

salt & pepper

cream (optional) - Table cream, whipping cream, cream cheese

Cheese - cheddar cheese, parmesan cheese, pecorino, or your favourites

garlic powder

dijon mustard

· 1/2 tsp dried herbs (basil, oregano, chives)

· 1/2 cup veggies (peppers, onions, mushrooms, zucchini)

· 1/2 cup tomato sauce

· 2 whole wheat flour tortillas

· 3/4 cup cheddar cheese
