TOOLS NEEDED for EVERY Class:

  • Apron

  • Water to clean produce

  • Cutting board

  • Spoons, fork

  • Cutlery knife

  • Medium bowl

  • Food waste bowl

  • Measuring cups and spoons

  • Plate

  • Cleaning cloth

  • Soapy water in sink

Oct 3: Apple Crumble Pie

INGREDIENTS:

1 Pie Shell - freezer section

Apples - or other fruit like berries

Flour

Lemon juice

Cinnamon

Brown sugar

Butter

Oatmeal (optional)

Oct 17:

Quesadillas

INGREDIENTS:

·   2 veggies – choice of: 

o   sweet peppers

o   red or green onion

o   tomatoes

·        1 can of red or black beans, or cooked chicken or meat

·        cumin

·        salt

·        paprika or chile powder

·        whole wheat flour tortillas

·        1 cup cheddar cheese

SPECIAL TOOLS:

Grater

Colander

Oct 24: Sweet & Savoury Crepes

INGREDIENTS:

flour

eggs

milk or alternative soy milk or coconut milk

salt

Butter

Seasonings - optional: garlic powder, cumin, ground coriander, (pepper flakes-optional), tumeric, pepper or cinnamon

Savoury fillings: CHOOSE at least 3   Scrambled egg, cheese, salsa  or asparagus and cheese sauce, or roasted peppers with goat cheese, green onions, spinach, peppers, grated carrot, mushrooms, or your favourite filling.

Sweet fillings:   vanilla, sugar, fruit - 2 or 3 types - berries, bananas, kiwi, apple, pear, strawberries, blueberries

Top with lemon juice, icing sugar, fruit, cinnamon, whipped cream, greek yogurt

HOLLANDAISE SAUCE - RECIPE

Oct 31: Skeleton salad with Bean Dip Brains

INGREDIENTS:

·       Veggies: Choose 3 bright colours:

Choose from:

Cucumbers, peppers, celery, broccoli, cauliflower, carrots, tomatoes or your favourite

Bean dip:

Can of white beans

Olive oil

Lemon or lime (juice and zest)

Salt and pepper

Optional herbs: Dill, chives, garlic, oregano, basil, cumin, chile powder -your choice!

·  TOOLS:

Fork or small food processor or stick blender

Nov 7:

Pasta Bake

INGREDIENTS:

extra-virgin olive oil

·        ¾ pound bulk hot or mild Italian sausage (pork, chicken or turkey or can of white beans)

·        4 garlic cloves, thinly sliced

·        dried oregano

·        fennel seeds

·        Pinch of red-pepper flakes, plus more for serving (optional)

·        1(28-ounce) can whole peeled tomatoes with their juices

·        1(14-ounce) can crushed or strained tomatoes

·        bay leaves

·        salt & pepper

·        dried pasta, such as small shells, farfalle or other shaped pasta

·        fresh mozzarella, torn into bite-size pieces

·       whole-milk ricotta

·       grated Parmesan

·       basil leaves

Nov 14: Minestrone Soup

INGREDIENTS:

4 TBSP butter

1 medium onion

1 stalk celery

2 carrots

2 cloves garlic, minced

2 medium potatoes (optional)

1 can cannellini beans or kidney beans or chick peas

1/2 cup shredded cabbage or kale

1 can tomatoes

1 liter of vegetable broth or 4 cups water, 1 TBSP soup bouillon powder

 ·        Up to 2 TBSP dried parsley and oregano, basil, marjoram

·        1 bay leaf

·        1 teaspoon salt or more to taste

·        ** secret ingredient 1 cm of parmesan cheese rind

Nov 21: Cabbage Roll Casserole

Family treat!

INGREDIENTS:

2 TBSP olive oil • 3/4 cup chopped onion • 2 cloves garlic, minced • 1 lb minced meat (ground beef, pork or turkey) • 1 can tomatoes or crushed tomatoes • 1 cup broth or water – beef broth or vegetable broth • 2-3 cups cabbage – finely chopped • 1 teaspoon salt or more to taste • ¼ tsp pepper • 1 tsp Worcestershire sauce • 2-4 TBSP tomato paste • 3/4 cup rice • 2 TBSP lemon juice

Tools:

1 Knife – sharp chef and paring knife

Nov 28: Shepherd’s Pie

INGREDIENTS:

Vegetarian option or make with your favourite minced meat

INGREDIENTS:

·        olive oil

·        1 yellow onion

·        500g lean ground beef or ground lamb or ½ cup each of red and green lentils

·        parsley

·       rosemary

·       thyme    

·        Worcestershire sauce

·        2 garlic cloves -minced

·       all purpose flour

·       tomato paste or ketchup

·        1 cup soup broth or water

·        1 ½ cups frozen or fresh veggies: Choose 3 bright colours from green peas, corn, carrots, celery, zucchini, eggplant or your favourite

·        3 cups potatoes -about 2 large potatoes peeled and cut into cubes

·        1/4 cup butter 

·        1/3 cup milk or cream

·        salt & pepper

·        1/4 cup parmesan cheese

SPECIAL TOOLS:

Grater

1 medium-large frying pan

Wooden spoon

Colander

Masher or large fork
