Oct 7:

Pumpkin scones

INGREDIENTS:

·      flour

·        baking powder

·       baking soda

·        salt

·        ground cinnamon

·        ground nutmeg, ground ginger, ground cloves or pumplin spince

·        brown sugar

·        cold butter

·        1 egg

·        ½ cup milk plus 2 tsp vinegar (or ½ cup buttermilk)

·        vanilla

·        ½ cup pumpkin puree

SPECIAL TOOLS:

Baking sheet

Parchment paper

2 cutlery knives

Oct 14:

Chicken or Turkey Noodle Soup (Vegetarian option)

INGREDIENTS:

Protein: Chicken, turkey, tofu or your choice

Raw poultry or cooked, bones can be used for soup broth.

Veggies:

Onion

Carrots

Celery

Seasonings:

Olive Oil

Salt & Pepper

Herbs: thyme, bay leaf, parsley

Egg noodles or angel hair pasta

Optional : Broth or bouillon powder or cubes

Special TOOLS:

Oct 21:

Creamy Primavera Pasta in One-pot

INGREDIENTS:

Pasta - uncooked small pieces any shape

Butter or olive oil

Onion

garlic or garlic powder

Soup broth

Milk

Cream cheese or Whipping Cream (optional)

Flavours: CHOOSE FROM

- Tomato, mushroom, meat or chicken

- Fresh or dried basil, lemon zest, nutmeg or chile flakes

Parmesan Cheese

2-3 cups veggies – CHOOSE FROM:

broccoli florets, cauliflower florets, peppers, spinach, shredded carrot, or green peas

salt and black pepper

Oct 28:

Grain Bowls with Roast Veggies

Ingredients:

Grains:  CHOOSE 1

pasta, rice, couscous, quinoa, sorghum, millet, barley (cooked or uncooked)

Bright Colours: CHOOSE 4 items at least 3 colours

Hard vegetables to Roast·   potatoes, cauliflower, sweet potato, squash, carrots, onions,  

Other Vegetables:

Green:baby spinach, kale, cucumber, celery, edamame, green onions, green beans, broccoli

·       Yellow:  Corn, yellow peppers, chickpeas, zucchini

·       Red: Tomatoes, red peppers, apple

·       Purple: red onion, red cabbage, Kalamata olives

·       White: mushrooms, kohlrabi, radish, garlic

Protein: CHOOSE 1 or 2

Black beans, leftover cooked chicken or meat, salmon, tuna, hard boiled egg, cheese, tofu, tempeh, haloumi, chick peas, meatballs, ham, feta cheese or your favourite.

Dressing: Pick your favourite dressing or sauce or make one!

Nov 4:

Pumpkin Soup

INGREDIENTS:

butter

onion

1 stalk celery

1 carrot

2 cloves garlic

ginger – grated fresh or from jar

ground coriander

ground cardamom (optional)

1 Litre vegetable or chicken broth.

3 cups pumpkin or squash chunks (fresh or frozen or canned)

honey

cream or sour cream

Salt & pepper to taste

Large pot with lid

Nov 11: Fish and Chips

Ingredients:

Fish - tilipia, haddock, cod or your choice of white fish fillets

Potatoes

Olive oil

salt & pepper

Bread crumbs

egg

flour

Tartar sauce: mayonnaise, dill pickle

Special TOOLS:

2 Baking sheets

2 plates,1 shallow bowl, large bowl

Nov 25:

Pizza Pockets

INGREDIENTS:

·Flour

Yeast

sugar

salt

olive oil

warm water

· dried herbs (basil, oregano, garlic powder)

tomato sauce

cheese - mozzarella, cheddar, marble, feta, goat, parmesan, your choice

· veggies & fillings CHOOSE 3:

peppers, onions, mushrooms, zucchini, tomatoes. olives, pepperoni, ham, bacon, chicken, spinach

2 bowls, 1 medium, 1 small, plate to cover each

Chocolate Brownies

INGREDIENTS:

butter

brown sugar or White sugar

1 egg

vanilla

flour

salt

baking powder or baking soda

cocoa powder

Fun Bits: Chocolate chips, Hemp hearts, seeds, nuts, dried fruits, coconut, sprinkles

Frosting:

2 TBSP cocoa powder

icing sugar

Milk

Special TOOLS:

Baking dish 8x8 square pan or large rectangular pan for double recipe

2 bowls - small, medium
