January 10:

Cornbread Muffins

INGREDIENTS:

·        2 eggs

·        honey

·        ¾ cup milk

·        ½ cup butter

·        ¾ cup yellow cornmeal

·       flour

·        baking powder

·       sugar - white or brown

salt

Fun bits:

Sweet: raisins, nuts, seeds, hemp hearts, pumpkin seeds, sunflower seeds, dried cranberries, chocolate chips, frozen blueberries, cheese

Savoury options: grated cheese, chives, garlic, jalapenos, sundried tomato, olives

SPECIAL TOOLS:

2 bowls

Muffin tin

muffin papers or butter/ oil for greasing

January 17:

Chicken Noodle Soup

Option to use Turkey, meat balls or make it vegetarian by leaving the poultry out

INGREDIENTS:

Protein: Chicken - uncooked breast, or leg about 500g, (turkey or vegetarian

Veggies: Choose at least 3

Onion - yellow

Carrots

Celery

Option

Optional veggies: potato, spinach or kale, peppers, mushrooms, sweet potato, squash, zucchini

Egg noodles or small pasta

Seasonings:

Garlic - fresh or powder

Olive Oil

Salt & Pepper

Herbs: parsley, thyme, rosemary, bay leaf (fresh or dried)

Optional flavour booster - bouillon cube or soup powder

Special TOOLS:

Large pot

January 31:

Pasta with Alfredo Sauce

INGREDIENTS:

Butter

Flour

milk

whipping or table cream

soup broth

Seasoning: garlic, Salt, pepper, nutmeg (optional)

Veggies (choose up to 3): peppers, onions, mushrooms, zucchini, broccoli, spinach

Protein (choose 1: ham, bacon, chicken, hard boiled egg

Cheese - parmesan or cream cheese, cheddar (optional)

Pasta - long or short pasta

Special TOOLS:

·1 medium skillet or medium pot

1 large pot for pasta

January 31:

Peanut Butter Buddy Cookies

Ingredients:

  ·        1eggs

Peanut butter or nut butter substitute (wowbutter)

·        butter or coconut oil

·        brown sugar

white sugar

·        vanilla extract

·        flour

·        baking soda

·       salt

·       Decorations: nuts, seeds, choc chips, candy, pretzels

Special Tools:

February 7:

Quiche

Cook in a crust or save time and do a crust-less quiche

INGREDIENTS:

Frozen pastry crust (optional)

Eggs

Butter or canola or sunflower oil

Protein (choose 1 or 2) : ham, bacon, sausage, or cheese

Vegetables (choose 3):

Tomato, Mushrooms, Onion, broccoli, spinach, peppers

Milk

Seasonings: Salt & Pepper,

choose from thyme, parsley, curry powder, nutmeg, cumin

Feb 14: French Toast Casserole

Ingredients:

Butter

Bread - slightly stale, day-old bread is perfect (2 slices/person)

Eggs

milk

Sugar

cinnamon

vanilla

Fun bits: Frozen or fresh berries, dried cranberries, raisins, hemp hearts

Jacket Potatoes

INGREDIENTS:

·

Medium potato (1 per person)

½ tsp butter

1 TBSP of each:

·        Green:  chopped green onion, or kale or parsley

·        Red:  Chopped red pepper, grape tomatoes, red kidney beans

·        Yellow:  Frozen corn niblets, chopped yellow pepper

1 TBSP Grated cheddar cheese

Fruit Cocktail with Jelly Parfait

INGREDIENTS:

Fruits - choose 3:

Berries, melon, apple, pears, orange, banana

Gelatin

Sugar

Hot water

Juice - apple juice or berry juice

Yogurt -optional

Fun Bits: Hemp hearts, seeds, nuts, dried fruits, coconut, sprinkles

Special TOOL:

Fun glasses for each person
