Tasty Salsa!



Fresh Tomato Salsa with Jalapenos

 4 tomatoes 

 ¼ red onion 
 2 tbsp (30 mL) chopped fresh cilantro 

 2 tbsp (30 mL) fresh lime juice 

 2 garlic cloves, finely chopped 

 1/4 tsp (1 mL) salt  

1 tsp Pickled jalapeno (optional)

  1. Wash tomatoes.  Slice in half to remove core and seeds of tomatoes. Dice (cut into very small even-size pieces).  Put into small bowl.

  2. Peel red onion, and chop into small pieces.  Add to bowl.

  3. Wash and dry cilantro with paper towel. Remove leaves from larger stems.  Finely chop 2 tbsp of leaves into tiny pieces. 

  4. Cut limes in half.   Place cut side down in citrus press, and squeeze over bowl.  Continue until you get about 2 tbsp or to taste  

  5. Peel and finely chop garlic.   If skin is hard, flatten clove to break skin first. 

  6. Combine tomatoes, cilantro, lime juice, garlic, salt in bowl with spoon.   Add salt in and mix. Taste for flavour.   

  7. Measure out about 1 tbsp of pickled jalapenos.  Finely chop and add to taste.

    Enjoy with corn chips to make a tasty snack or add cheese, olives, peppers and your favourite toppings to make a great plate of nachos!
