Pancakes

Fluffy Pancakes!

1 cup flour

Pinch of salt

1 teaspoon baking soda

1 egg

1 cup milk

2 teaspoons butter

1. Measure flour, salt, baking soda into large bowl. Mix carefully.

2. Make a ‘well’ in the centre and add the egg. Beat the egg and mix in half the milk.

3. Gradually mix in the flour. When the mixture is smooth with no lumps, beat in the rest of the milk.

4. Heat the pan over a medium heat. Add a teaspoon of butter to the pan and swirl it around to cover the whole surface.

5. Pour enough batter to make one pancake.

6. Lift up the edge of the pancake to see if it is brown. Loosen round the edges and flip with the spatula. Cook the other side until golden brown.

7. Turn out each pancake onto a warm plate.

8. Sprinkle with lemon juice, cinnamon, fresh berries, icing sugar or maple syrup.
