Refried Beans
Refried Beans
· 1 TBSP olive oil
· 1 brown onion, finely chopped
· 2 garlic cloves, crushed
· 400g can red Kidney beans, drained, rinsed
· 3 tsp ground cumin
· 1 tsp ground coriander
· ¼ tsp chili powder
· 2 TBSP ketchup
· ¼ - ½ cup water
1. Heat oil in a saucepan over medium heat. Add onion. Cook, stirring, for 3 minutes or until softened.
2. Add garlic, cumin, chili and coriander. Cook, stirring, for 30 seconds or until fragrant.
3. Add beans and 1/3 cup cold water. Cook, uncovered, for 5 minutes or until heated through. Remove from heat. Cool slightly.
4. Transfer mixture to a heatproof bowl. Using a fork, coarsely mash. Season with pepper.
Serve with Tacos with lettuce, tomato, guacamole, salsa and cheese, Burritos with rice, cheese, salsa
or between two soft tortillas with cheese and possibly other veggies or and cheese for Quesadillas!
