Stir Fry veggies with noodles
INGREDIENTS:
Choose 3 bright colours:
· Green veggies – broccoli, green beans, celery, snow peas, cabbage
· Red veggies – red peppers
Orange veggies - carrots, orange peppers, squash
· Yellow veggies – corn, yellow peppers
· White veggies – onions, garlic, water chestnuts, cauliflower
Olive oil, or broth
Seasoning: salt, pepper
Teriyaki sauce or favourite stir fry sauce or oil-based salad dressing
Protein Power: Add some marinated tofu, chicken, beef or fish to make this a meal.
Noodles - vermicelli -rice noodles or glass noodles

Nov 20: Mexican Bowls
INGREDIENTS:
· 1 small red onion
· 3 Bright colours of veggies:
Choose from:
For roasting: Potato, sweet potato, squash, carrots, parsnips, cauliflower, broccoli, tomatoes
· Corn
· 1 can of Black beans or pinto beans
· ¼ cup Cheddar cheese
· 1 Avocado
· 2 cups of Grain (cooked) – rice, bulgar, quinoa, barley
· 3 tablespoons olive oil
· 1 teaspoon cumin
· 1 teaspoon smoked paprika
· 1 teaspoon chili powder
· ¼ teaspoon cayenne (or to taste)
· Salt & Pepper
· 1 Lime -juice
· 1 TBSP honey or maple syrup
· Cilantro for garnish
Mexcian LIme DRESSING:
· 2 tablespoons freshly squeezed lime juice
· 1 tablespoon pure maple syrup
· ½ tsp cumin
· ¼ teaspoon salt
· pinch of pepper
· ¼ cup olive oil

INGREDIENTS:
· 4-6 eggs
· 3/4 cup milk or almond milk
· 1 tsp baking powder
· 2 TBSP flour
· 2 cups vegetables
Choose from 3 bright colours:
Tomatoes, peppers, green onions, zucchini, red onion, broccoli, spinach, cauliflower, mushrooms, kale
· 1/2 cup grated or crumbled cheese (cheddar, feta, mozzarella)
· 1/2 teaspoon salt
· Pepper to taste
· 1 tsp herbs (basil, parsley, cilantro, or dill)

INGREDIENTS:
Vegetarian option:
Bean Burgers - Make mixture the day before for best texture
1 can of black beans or kidney beans
1 can of dried chickpeas
1 egg
1 cup carrot grated
2 medium onions or 1 large onion diced finely
1-2 cloves Garlic
1 tsp Cumin
1/2 tsp salt
½ tsp pepper
1/4 tsp chile powder
OR
· 1 lb of fresh ground beef
· 1 onion
· 1 egg
· ½ cup oatmeal
· ½ tsp salt
· Pepper to taste
Whole wheat buns
Toppings:
Lettuce, tomato, pickles, red onion, mustard, ketchup, relish, mayonnaise, cheese, mushrooms, bacon

Grated mozzarella cheese
1 Cup ricotta cheese or 1 Cup cottage cheese

Tomato marinara sauce or meat sauce
Zucchini, mushrooms, eggplant

Teriyaki Sauce with Salmon or Tofu, Steamed Veggies & Mashed potatoes
INGREDIENTS:
· soy sauce
· brown sugar
· Honey
· 1 Cup water
· corn starch
· 3 Cloves garlic
· Grated ginger
· Mirin (optional)
· Sesame oil, (optional)
Salmon - roughly 120 g per person (handful size) per person
Green veggies for steaming - broccoli, asparagus, or green beans
Lemon or lemon juice (optional)
Potatoes - 1 per person
