: Hearty Soups
We will discuss the foundations of any delicious hearty soup, and I will make the Mediterranean Bean Soup. Cook along with your own ingredients! Substitutions to make it your way are encouraged.
Three soups will be discussed in detail. You can choose which one your prefer, based on the ingredients you have.
Recipes: Mediterranean Bean soup, Chicken noodle, Caldoverde - Sausage, potato and Kale,
INGREDIENTS:
butter or olive oil
onion, carrot, celery
Other vegetables could include: mushrooms, zucchini, potatoes or peas
garlic
1 large can white beans
baby spinach or swiss chard or kale (optional)
1 liter soup broth
Seasonings: thyme, marjoram or oregano, bay leaf
salt and pepper
Parmesan cheese, parsley for garnish
