Shakshuka with flatbreads

Ingredients:

·         olive oil

·         1 large yellow onion

·         1 large red bell pepper

·         sea salt

·         3 cloves garlic

·         tomato paste

·         ground cumin

·        ground coriander (optional)

·         smoked paprika or regular paprika

·         red pepper flakes or cayenne pepper (optional) OR

·         harissa paste (optional)

·         1 large can (28 ounces) crushed tomatoes

·         1/3 cup fresh cilantro or flat-leaf parsley

·         1 cup spinach or kale chopped(optional)

·         Freshly ground black pepper, to taste

·         4 to 6 large eggs  (1-2 eggs per person)

·         ½ cup crumbled feta

Flat breads:

2 cups flour - all-purpose or GF substitute

butter or olive oil

3/4 cup milk

salt

olive oil

1 Knife – sharp chef and paring knife
