Hearty soup, that is good any time!
4 TBSP butter
1 cup Mirepoix (chopped onion, carrot, celery)
2 cloves garlic, minced
1 large can white beans
1 cup baby spinach or swiss chard
1 liter of vegetable broth
2 tsp thyme
½ tsp marjoram or oregano
1 bay leaf
1 teaspoon salt or more to taste
Parmesan cheese, parsley for garnish
1. Wash and chop the vegetables into a small pieces (diced).
2. Peel and mince the garlic into tiny pieces using the cross-chop method.
3. Wash the beans in a colander.
4. In a large heavy-bottomed pot, at medium heat melt butter and sauté the onion, celery and carrots for 3 minutes.
5. Add the vegetable broth plus an extra 1 cup of water.
6. Add the seasonings and beans.
7. Increase the heat to bring the soup to a boil, then decrease heat to simmer for 10 minutes.
8. Add the washed and torn spinach or swiss chard for the last 2 minutes.
9. Serve with a garnish of parsley or parmesan cheese.
