Time to Listen and Learn: Indigenous Food Traditions
Did you know that white corn or Indian corn
is not the same as the sweet corn we eat.
has far more protein and life-sustaining nutrients
requires a process to boil it with hardwood ash to remove the hulls
Is roasted to become like candy
Only 5 kernels of this corn would sustain the hunters for a day while they were on long hunting trips and they would carry the corn in a special pouch
Facts like this and so much more have made working with Edgar Ahosenae fantastic learning opportunity both for myself and the COOKSMART families.
Did you know that corn soup:
Is only made for special occasions or funerals
Can take three-days to make properly in the traditional way
Has four main ingredients but has a complex flavour from the process
Is a dish that brings community together, to honour the elders, the friends and the family
Being a Knowledge Keeper from the Wolf Clan of the Cayuga tribe, Edgar is full of stories about the philosophies and beliefs of how different foods came to be important, native language from his grandmother, and lots of recipes from his culinary background.
With new eyes and knowledge, I look forward to working with Edgar to present more workshops together for many more students and families.
