Sugar Cookies

★ 1 cup butter room temperature

★ 1 cup granulated sugar

★ 2 tsp vanilla extract

★ 1 egg

★ 3 cups flour

★ 2 tsp baking powder

1. Preheat oven to 350°.

2. Cream the butter until fluffy.

3. Add the sugar and beat well.

4. Add in vanilla and egg. beat until combined.

5. Mix the flour and baking powder in a separate bowl.

6. Add the flour mixture to the butter mixture and work into a soft dough. The texture should be like Playdoh. Add a little flour or water if needed to get it to a soft, pliable consistency.

7. Turn out onto a floured surface. Use a rolling pin and roll until about 3 mm (1/4 inch) thick.

8. Use cookie cutters and cut out desired shapes. Transfer the cookies to a lined cookie sheet.

9. Bake for 6-8 minutes or until the centers are puffy and no longer glossy. Pull the cookies out of the oven BEFORE they start turning brown. As long as there’s no sheen in the centre of your cookie, it’s done!

For Sand Dollar Cookies - Make sugar cookie dough

Mix 2 tsp cinnamon with 1/4 cup white or brown sugar.

Roll ball of cookie dough in cinnamon & sugar mixture

Flatten on baking sheet with a flat object (e.g. drinking cup or measuring cup) to 3-5 mm

Add 5 pumpkin seeds or sunflower seeds in flower pattern around centre.

Bake 6-8 minutes.
