Fruit Jelly Parfaits

• 1 ¾ cup 100% fruit juice

• ¼ cup boiled water

• 1 TBSP gelatin powder

• Fruit- choose your favourites *

• Yogurt – Greek, plain or flavoured or whipped cream

1. Wash and cut up the fruit and place into bottom of serving bowls or glasses.

2. "Bloom" the gelatin by mixing 1 TBSP gelatin powder in ¼ cup of cool or room-temperature fruit juice and whisk it up until it is smooth and becomes thick.

3. Pour ¼ cup of hot (just boiled) water over it, and whisk well to dissolve evenly.

4. Add in the remaining 1 ½ cups of fruit juice, and mix well to combine.

5. Pour the mixture into and place in the freezer to set for about 45 minutes. It's done when the top is firm to the touch.

6. Top with a layer or dollop of yogurt or whipped cream.

7. Garnish with fruit, hemp hearts, coconut or chocolate bits.

*-Note: Avoid fresh pineapple, kiwi and figs which have enzymes that will keep gelatin from setting properly.
