TOMATO SOUP

Ingredients:

1⁄4 cup Butter

1 Onion – chopped

1 L Soup broth

1.36 L Tomatoes – pureed

Salt & Pepper

1. Melt butter slowly in large pot.

2. Sauté onions in the butter until they are translucent (not white anymore, but not

brown).

3. Add the tomatoes and simmer for 5 minutes.

4. Add the soup broth.

5. Simmer for 20 minutes.

6. Add salt and pepper to taste.

7. For creamier soup, blend with a hand-blender. For the creamiest soup put into blender.

Garnish with pepper, basil, grated cheese, croutons or grilled cheese cubes.

Enjoy with a protein snack like hummus & veggies or grilled cheese sandwich.
