Pasta Salad
What you need:
Pasta, rice, quinoa - uncooked - about 1/2 cup dried per person
3 COLOURS OF VEGGIES - about 1 handful sized serving of each per person
· GREEN: green pepper, pickles, parsley, cucumber, celery, avocado, olives
· RED OR ORANGE: Grape Tomatoes, red and orange peppers, grated carrots,
· YELLOW: chick peas, sweet corn, yellow peppers
· WHITE: Pasta, rice, quinoa, or even potato works
· Cheese – cheddar, parmesan
BLACK OR PURPLE: olives, red cabbage, red leaf lettuce
DRESSING: Use your favourite: Ranch, Italian, Californian (or Catalina), Caesar or make your own:

¼ cup Acid: lemon juice, balsamic vinegar, or apple cider vinegar
¼ cup Oil: Extra Virgin Olive Oil
Salt, pepper and herbs (eg . chives, Italian seasoning, sundried tomatoes, garlic)
Kitchen Tools you will need:
Cutting board
cutlery knife
peeler & grater if using carrots
Pot with lid for pasta
colander or strainer
large bowl and small bowl
jar with lid for salad dressing
