Ingredients:
· 2 Veggies - peppers, green or red onions, or tomatoes
1 can of red or black beans
· ¼ tsp cumin
· 1/2 tsp salt
· 1/8 tsp paprika or chili powder
· 8-10 whole wheat flour tortillas - 2 per quesadilla
· 1 cup cheddar cheese - block or shredded
Sides to serve with finished quesadillas: salsa, sour cream, guacamole

Substitution: Use what you have!
Corn or Gluten-free tortillas
Shredded cheese
Refried beans
Other proteins - cooked chicken or beef or pork or fish

Bowls - 2-3 small bowls,, 2 medium bowls
